Red Enchilada Sauce
This is fantastic! It gets better every time I make it. I use on the wonderful Black bean & Rice Enchiladas from this website, and it gets rave reviews every time. It fast, easy and forgiving, so you can make it your own. Thanks!!

Savory Grilled Potatoes
This is a staple whenever we grill! I skip the mayo and use 1-2Tbls olive oil. I also cut them in half and boil for a few minutes first, only because I fear under-cooking potatoes. Thanks for sharing! DE-lish!

Cheesy Potato and Corn Chowder
Really good soup - I prefer potato soup a little thicker, which is why I gave it 4 stars instead of 5. For a little more flavor, I added garlic when I sauteed the onion/celery, and carrots with the corn for more veggies. Next time, I will add less milk or broth, and probably simmer a good hour so it soaks up the flavor.
