This is very similar to a recipe I make. My only changes are that I use 12 slices of bacon (cook until crispy)and chop up an entire small onion. I've also substituted the Monteray Jack with Cheddar when I don't have any on hand...not a big deal. This is a dish that people hover around b/c they can't stop eating it...soo yummy!!

I made this last night for a pumpkin carving party...and everybody loved it! I loved that it was soo simple to make and had only a small mess to clean up later. I wasn't sure how much 5 quarts was supposed to be, so I guessed and used three bags of lite microwave popcorn. It was the perfect amount. I also wanted my popcorn to be a little chewier and so I took it out 15 minutes sooner, but it still ended up being crunchy.
