About this Cook
Stay at home Mom with a busy working husband.
My favorite things to cook
Love fixing cookies and easy desserts. Enjoy cooking mexican and cuban dishes. And anything that's a hit!
My favorite family cooking traditions
Unfortunatly I didn't take up cooking back when I could have learned wonderful things from my Grandmother.
My cooking triumphs
I'm learning the ability to take other recipes and change them around to make them my own. And every once in a while creating things from new just from knowing the flavors and what works. I'm loving learning to 'really' cook.
My cooking tragedies
Whenever something fails even when you've done everything right (at least you think you have). I've had it happen a few time, but luckily it wasn't when I was serving dishes just practicing.

Brown Sugar Meatloaf
This is the best meatloaf ever!! Thanks for submitting. I omit the milk and add a few splashes of soy sauce and a clove or so of minced garlic, just adds a little extra flavor. I use 1 lb. of lean ground beef and 1/2 lb. of ground pork. This is now a family favorite.

Double Layer Chocolate Peanut Butter Pie
This is a wonderful and easy pie. I used a little less cream cheese then the recipe calls for and also used 1 cup milk & 1 cup heavy cream instead of the 2 cups milk called for (I didn't have time to wait for it to sit, plus helps it be nice and firm.) I halved the peanut butter mixture cause it seemed too peanut buttery to me and also seemed to be too high of a pie. I've made this several times with rave reviews. Thanks for submitting it.

Chicken Tortilla Soup V
Wonderful and easy tortilla soup. Just what I was looking for! It is a wonderful way to use up some left over chicken also. Just shred and pop in while cooking. I added a little more spice and garlic then the recipe calls for but I like a lot of flavor. Thanks for submitting this, it will be a regular in my house this winter.
