Sausage Brunch Casserole

Delish! I prebaked the crust for 10 minutes and then baked the entire thing at 350 for addtl. 25 minutes. Simple and hearty. My kids like it that it doesn't have mushrooms, onions broccoli etc! haha! Thanks!

Old-Fashioned Scalloped Corn

Good.I would give this 5 stars but the flavor was just corn-y. I like the texture. I like the crackers. Next time I will saute half an onion in oil or bacon grease add a couple shakes salt and pepper and then it will be a 5!!

OU Corn Casserole

If your OU is for the Sooners then it is a five star plus! Easy and inexpensive casserole made with things you almost always have on hand. Sometimes I add green chilis and a handful of shredded cheddar.

Eclair Cake

Serves up really pretty with all the layers intact. I got rave reviews with lots of requests for the recipe. It was a little light for me. I may try it sometime with a richer layer (add cream cheese and sugar to pudding or sweetened condensed milk)but for most everyone else it was fab.

Pumpkin Spice Cake II

This is a great Fall cake. I bake it in a bundt pan and then drizzle with cream cheese icing. I double the spices so it is really spice-y!

White Chocolate and Cranberry Cookies

I used these for my Christmas cookie exchange this year. I slighty underbaked them so they would stay soft since most exhange cookies get hard. I added toasted slivered almonds and almond extract instead of the brandy. Yum

Spinach Beef Macaroni Bake

My husband loved this. I am only giving it a four because I changed it up a bit. I did not add the tomatoes to the mix and instead added 2 cans of cream of celery and half a can of milk.Then I garnished with a little cheddar and tomato. I don't usually add Italian spices to food and I must say it was delicious!

Really a nice salad. I used Romaine and green onions as I did not have red leaf and red onion, equally as good though. I served for a ladies luncheon with quiche and bacon wrapped breadsticks~~yum.

Wow. My family scarfed these down! I did not have chili paste but I did have a little chili oil I added in and I used canola instead of safflower. Thanks for a great dish!

Spicy Bean Salsa

I made this 3 times over the holidays. Everytime several different people asked for the recipe. I bought the peas and beans with a little jalapeno already in the can which was enough for me and a mustis to buy PETITE DICED TOMATOES unless you love big chunks!! Loved it for New Year's so we could get our black eyed peas in! Luck in our salsa!

Chinese Cabbage Salad II

Love it! It has LESS FAT than the recipe I usually make and ALL the flavor! I skipped the step of cooking the dressing and just shake it really well in a glass jar. To me it turns out the same. I also crumble my dry noodles and toast them as well. Cabbage or broccoli can be interchanged depending on what I have on hand. My family all wanted me to make more, NOW.

I love this salad and have made it for years. Sometimes I toast the noodles sometimes I just crunch them and add. Try the leftovers in a wrap. Every bit as good!

Brown Sugar Meatloaf

I don't have a official Meat Loaf recipe so I am looking for new options.I read the reviews and made the following alterations: I omitted the ginger and added Onion Soup Mixwith a little extra milk to the meat mixture for more flavor. My husband and I liked the extra sweetness of the sauce on the bottom my daughter did not. That part is optional but the consistency of the meat loaf from the mixture recipe was very nice. I will make it again

I am always looking for hearty inexpensive good casseroles so this one got my attention. Not my fav. My husband really liked it. Maybe adding a can of cream of mushroom to the ground beef mixture would've helped?

Honey Bun Cake I

I think you have to really like cinnamon to like this cake. Maybe if I had added some pecans to the brown sugar mixture I would've liked it more. I served it to 9 at a gathering and 4 really liked it others were kind and did'nt say much. I had a bite of it warm (couldn't stand the suspense and liked it way better than when cold)!

Baked Chicken Nuggets

Yum. Make sure the chicken is well thawed or the butter freezes to the chicken and the crumbs dont stick! I used Ritz crackers instead of bread crumbs and added oregano and basil instead of thyme. Served to company with mashed potatoes and glazed carrots. Everyone wanted seconds!
