Baked Ziti IV

Reviewed: Nov. 21, 2005
This was really good, but made a few changes. Used ricotta instead of cottage cheese and mixed it in a bowl with sour cream and parsley before layering. I used 2 cups ricotta and 1 cup sour cream. I also added oregano and basil to the onion mixture and a little bit of oregeno to the hamburger/sausage while browning. I used a full pound each of lean ground beef and Jimmy Dean hot sausage. Cooked 30 mins. with foil cover and 15 mins. with cover off. Great recipe~

Tommy's Ham Casserole

Reviewed: Oct. 10, 2005
Not something I would actually cook a ham for, but a genius way to have a left over ham meal. I added 1.5 cans of cream of mushroom soup with garlic. About 3 cups of sharp cheddar. Salt, pepper and a bit of garlic. A good way for ham the second day. I baked covered the first 20 mins. , then put italian bread crumbs on top, covered and baked another 10. But, I can say, it is filling and I am full, Served with fresh tomato slices and olive bread.

Swiss Chicken Casserole II

Reviewed: Sep. 15, 2005
I have been trying serveral chicken casseroles. This was OK. I added wine instead of milk, pepper on the layer of swiss cheese. I also used cream of chicken with garlic soup. I used a whole box of stuffing, but still there could have been more.Stuffing was a bit watery. I was a bit disappointed with the cheese. I expected more because I added 4 more slices. My husband said it was not as good as my regular recipe (his mother's), but it was better than the last tried. Do not think I will make this again, unless pressed for time. I served with cheddar garlic biscuits and wine. I will say, in a bind it is quick and easy to prepare.

Baked Spaghetti I

Reviewed: Sep. 6, 2005
This was a great recipe. I read the reviews and added spices, more cheese, some tomato sauce and an extra can of mushroom soup. My husband loved it and offered to do the dishes. I let him. Served with texas toast. I will definatly make this again.

Best Ever Chicken Casserole

Reviewed: Aug. 31, 2005
I found this recipe lacking substance. It had no color and was very bland. I read the reviews and lowered the mayo and added cheese. I also added garlic.I was most disappointed that the cheese and corn flake crust was very hard. I think it should only be cooked about 45 minutes.I made the mistake of walking out in the yard and not keeping a good eye on it. I should have taken it out earlier. I will not be making this again.
