Spicy Grilled Cheese Sandwich

These were a little too spicy for me. Hubby loves spice so he thought they were delicious. I just added onion and tomato to mine. I did not grill these on the stove, but baked open face in the oven.

Chuck's Favorite Mac and Cheese

I doubled this for Christmas. I added 2 eggs and 1/2 cup milk to the cheese mixture. Got rave reviews and will be making again and again. I really does taste like cafeteria mac and cheese. (A fond childhood memory).

Unstuffing Side Dish

This was wonderful stuffing. I am use to making the traditional cornbread "Southern" stuffing, but this was wonderful. I used a whole lb. of sausage. Also, I cheated and did not use bread, I used onion and sage stuffing mix (2 bags). I mixed with chicken stock and spooned some of the turkey drippings on top after I had put it in the pan. I will make this again!

Sweet Potato Casserole II

This was really good with thanksgiving dinner. I made too much and next time will make it according to the amount listed. I added chopped pecans in and on top. Also a bit of nutmeg. Definatly will make again but will not double the recipe. It is very sweet and a little goes a long way!

Simple Time Pork Chops

I made this the first time with 4 thin bonless chops and it was OK. They would have been better with just Shake and Bake. The 2nd time I did it I made with 2 THICK bone-in chops and it was much better. I really think it moistened the thick chops and kept them juicy. I moved it up from a 3 to a 4 for the last meal.

Southern Macaroni and Cheese

This was not very good. I am from the South and I understand what it was trying to achieve, but it did not make it. I will be using my regular method with ricotta, cheddar and eggs next time. As with the other reviews, maybe it will taste better tomorrow. Live and Learn...........

Sausage Balls

This is a really good basic recipe. There really is not much you can do to make sausage balls wrong. I made them with Jimmy Dean hot sausage and sharp hand grated cheddar cheese. Cooked them on the slotted pan to stop grease dripping. Hubby wanted something different for breakfast and he can eat them on his commute. He thought they were delicious. I think I may make some additions to the next batch and keep them "in stock".

Gourmet Chicken Salad II

This is not something I usually make. I followed the recipe exactly. I is very good, but has too much of a mustard taste for me. Hubby loved it and made a sandwich for dinner last night of it. Next time I think I will cut down the mustard to just a tiny bit. Overall, very good and will make again.

Never Enough Green Bean Casserole

This was good, but nothing outstanding. Mine was a little soupy and I could have added an extra can of green beans to firm it up. I made this casserole just as a side dish for hamburger steaks. I think I will save green bean casserole for a holiday. It seemed weird eating this in October.

Cream Cheese Corn Bake

This was really good. I doubled the recipe for leftovers and because I had a big bag of frozen corn. Defrosted the corn as others as said. It was a bit spicy for me but my hubby loved it. I added some shredded cheese on top for extra. Thanks~

Hamburger Steak with Onions and Gravy

Creamy Swiss Chicken Casserole

This was good. It did not take much effort and was tasty. I used 3 thick chicken breast (thats all I had). It took over a hour (covered) to cook. That is the only difference I had. It is not a recipe that will change your life, but it is good when you don't feel like doing much and want some comfort food. We will see how leftovers taste today.

Catherine's Spicy Chicken Soup

This very delicious! I put it in the crock pot while hubby was surfing in the afternoon. It made the house smell so good and tasted great. I omitted the tomatos and added kidney beans instead. Served over tortilla chips with cheese. Made a wonderful dinner and we are going to have it again tonight. ~ Thanks

Grilled Portobello Mushrooms

Just didnt do anything for me. Husband liked it, but I cannot get over the texture. It just must be something personal. Served with wild rice, wheat bread, chardonnay. I ended up eating a bowl of cereal later!

Mediterranean Chicken with Eggplant

My husband and I both loved this. I have made it a few times since on the heart healthy diet. Last time I served with whole wheat tortillas and some grated parmasean cheese. Delicious! With leftovers made sandwiches for lunch the next day. Will be making again and again.

Butternut Squash Pizzas with Rosemary

Update: I actually use this as a base recipe and make it often. I should post another recipe, but here goes. I do not use squash. I saute garlic and onions. Spread some tomato paste on the two pizzas and top with the sauted garlic and onions (sometimes add romemary). I wait until they are almost done to sprinkle with parm. cheese. I have changed this, but I really like the pizza and it is better than store bought. Husband thought this was really good. I had a hard time making the pizza's, but with alot of kneading it worked out. I am not a big fan of butternut squash, I just added the onions to mine. Added fresh grated parmasan cheese.
