About this Cook
Full time beach bum. I am learning to cook new foods each week. It is just my husband and I, and he is a vegetarian. I enjoy seafood (of course) and italian. I like a good casserole that will last a few days.

My favorite family cooking traditions
We do not have any cooking traditions. My mom is not a good cook. I grew up on dad's grilled steaks and a baked tater.

Thai Noodle Salad
I had never tried to make anything thai before and this turned out pretty good. I wanted a pasta salad for the weekend, so I made this and left out the lettuce. Used carb smart speg. noodles. Hubby said it needed a bit more "kick" so he added more soy sauce to his. I will try again. It was something new and fun.

Slow Cooker Chicken Stroganoff
Kinda bland. I guess for confort food it was OK. Nothing Special~ Sorry

Vegetarian Chickpea Sandwich Filling
I had my doubts because I am new to this vegetarian thing, but this is really really good. I mashed the beans, but not to a paste, they still had some substance to them. Added 2 stalks of celery and a bit more light mayo (it seemed dry). You really could not tell much of a difference between this and chicken or tuna salad. Something I will keep on hand in the fridge. Thanks~
