I am in my final year of grad. school to become an occupational therapist. I graduate in May 2010 and can't wait to start "real life". I am married and have a little puppy named Lillie. I couldn't love them more.
My favorite things to cook
I love to cook very simple recipes that don't require a lot of ingredients but still have amazing flavor and a lot going on. I'm big on "down home cooking" like mashed potatoes, green beans, chicken, and gravy. I really like anything as long as it doesn't require buying a lot of extra stuff at the store.
My favorite family cooking traditions
My grandma's homemade veggie soup and bread. I love anything that any of my family makes, it's not just food to me. If they took the time to prepare something it's about love and making each other happy.
My cooking triumphs
One time I made a Paula Deen apple pie. It was HUGE. It went over very well and was delicious. That was a pat on the back for me.
My cooking tragedies
Creamy polenta. I don't know if it was just a bad recipe or if it was me but it came out tasting kinda bad. It was a tragedy because I had to throw out all that food. I won't make it again.

Easy Baked Tilapia
I absolutely loved this dish. I really don't like fish most of the time but this recipe really surprised me. I used frozen Tilapia and frozen veggies (carrots, broccoli, and cauliflower mix). I didn't have fresh lemon so I just poured about a Tbsp. of juice over the fish, drizzled them with evoo, salt, pepper, and the seasonings mentioned. I surrounded them with the veggies and put some margarine on top. Since I used frozen fish I had to cook it for a few extra minutes. It turned out wonderfully. Thanks!
