Mini Cheesecakes I
I made this just as the recipe states. It turns out PERFECT every time!!! I always make different varieties. I put one half pecan on top and drizzle chocolate on top; I use frozen strawberries; I leave a few plain and sprinkle a little of the wafer crumbs on top. When I'm done with these varieties, I take oreo type cookies and crush a few for the crust, and coarsely chop some more. I use the coarsely chopped to mix into the remaining cream cheese mixture and then also use some as a topping. These little cheesecakes are quickly becoming a specialty of mine and are being requested by friends when they are coming for dinner! Enjoy!
