About this Cook
I like cooking, I just don't like to spend hours in the kitchen doing it. I think you can make some very good, nutritious meals without doing that. I like to experiment with new recipes all the time. I find recipes, adapt them to my tastes & often make them better than they were written by the addition of spices, wine, or other ingredients.
My favorite things to cook
I love seafood, so anything with seafood in it is all right in my book. We don't have fresh seafood where I live, so I have to settle for frozen. I also cook with a lot of chicken & am always looking for different ways to use it.
My favorite family cooking traditions
My mother loved baking desserts when I was growing up to feed her sweet tooth, that's where I got mine. She made cobblers with fresh peaches, strawberry shortcake with strawberries we picked, & pies & cakes from scratch. She made her own pie crust, something I don't do. But I like making desserts too & make my cakes from scratch, not from a box.
My cooking triumphs
I'm always glad & find satisfaction when I try a new recipe & it turns out good. The true test is if my husband likes it & wants to have it again. He's my guinea pig & I'm glad he likes to try new things as well as I do.

Ashley's Chocolate Chip Cookies
I doubled the recipe because it doesn't make enough for a big batch. I took these cookies on a campout with a bunch of people & they all raved about how good they were. The only problem was they went way too fast!

Chocolate Cookie Buttercream Frosting
I added more cocoa powder to make this frosting a little more chocolaty. Other than that I thought it was really good.

Chicken Pot Pie VIII
I had to give the recipe 4 stars instead of 5 because of the changes I made. I used refrigerated pie crust instead of scratch & it worked great. I used frozen veggie mix along with frozen O'Brien potatoes & it was so easy this way. I pre-cooked several chicken breasts & cut up in chunks to add to the other ingredients. Everybody loved this recipe & said it was much, much better than the frozen things you get in the store. I will definitely be making this again!
