Vanilla Wafer Cookies

Ok, so I substituted the butter even tho it said not to, because I wouldn't have been able to have them otherwise. I used refined coconut oil. When placing the dough on the pan, it seemed to time consuming to shape each little circle, so I put them in a decorator tube used for twice baked potatoes and squeezed the dough out holding the tip close to the pan. While they cooked the design left and they became perfect little circles. I sure this is better with butter, but I'm pleased with the results and flavor with the coconut oil.

Oatmeal Whoopie Pies

I substitued 3/4 c. refined coconut oil for the butter. The cookies turned out fabulous. I made large cookies and was able to make 24 or 12 pairs. To keep this soy free, for the filling I used Spectrum Organic Palm shortening, reducing the amount to 1/2 + 1/8 cup. Substituted coconut milk for regular milk. Overall very good results. Doesn't taste exactly like a LD Oatmeal creme pie but I'm happy and chemical free.

Super Al's Cocktail Sauce

I have made this twice now. The first time I bought a horseradish root and minced it as fine as I could- I didn't like the results. I was able to find horseradish made by BoarsHead that was just finely diced and it made all the difference in the world. This is a great recipe and very flavorful.

Summer Squash Casserole with Nuts

This was excellent. I used walnut oil instead of the butter and omitted the cheese. I was concerned the consistency wouldn't be right without the cheese, but it held together and was most tasty. I have always had some aversion to casseroles that call for mayo for some odd reason, so I'm very glad that I went ahead and tried this.

Broccoli Soup

I just got done making this. I had to keep my 4 year old out of the kitchen so he couldn't see the broccoli being added to the pot/blender. Once it was all blended I allowed him to try a spoonful and he loved it. Success! I used vegetable broth instead of chicken broth, omitted the nutmeg, and used 4 small new potatoes. My husband will probably want more salt and pepper on his, but this is definitely a keeper!

White Bread For The Bread Machine

I literally make this recipe everyday. I use corn oil to keep it soy free as opposed to vegetable oil. I have used organic flour and Red Mill's flour with 30% whole wheat. Both make successfully risen loaves.

Banana Banana Bread

This is a perfect no milk recipe. Instead of shortening or butter I use 1/4 c. coconut oil and 1/4 c. applesauce. This keeps it a soy free food.

Cocoa Rub

Very tasty. I used this on salmon. I did decrease the chili powder and pepper down to 1 Tbls because I do not like overly spicy foods. With this reduction it was very tasty. I had used sea salt crystals and wish that they had been ground a little more as I did get a piece of salt during one bite that wouldn't have occured with a finer milling.

Indian Peanut Stew

This must be a recipe for people that grew up with this type of food. I made it exactly as the recipe stated and it was horrible. The peanut butter overwhelmed all the other flavors. My family took one spoonful and we were off to McDonald's.

I give this recipe 5 stars because while I didn't like it, I think it's because I am not use to eating Indian food. It was much too spicy for me. I made this along with the Roomali Roti bread that's on this site. I had my oldest daughter take the leftovers (there was alot) to the Indian store where I had purchased the spices. They ate it for lunch and said I had made it better than some Indian women could and that it was delicious. So the recipe must be worth 5 stars and tasty to those with the right tastebuds.

Mama D's Italian Bread

Wonderful! I used 1 large cookie sheet and divided the dough into 4 loaves. I misted the loaves every 5 minutes because it's so much fun, and they were done within 25 minutes. 3 of the 4 loaves fed a dinner party of 8. Another reviewer had mentioned they had trouble getting their bread to rise, I did not, but I did notice that 1pkg of yeast doesn't measure 1 tablespoon, so perhaps they were depending on the labeling of the package and not actually measuring their yeast. I used the kitchenaid mixer, used it to do all the kneading so this was a very easy recipe.

Chicken Cordon Bleu II

The sauce was excellent. I sprinkled paprika on the chicken and then coated it with flour and fried it in oil in a cast iron skillet until nicely browned on both sides. I then transfered them into a pan with 1/2 the recommended butter and proceded with the recipe. Strictly a personal preference but I think frying it in the oil allowed a crisper crust.
