Peking Pork Chops

This was very good. My bf and I both enjoyed this. Only thing I will change next time is use a different cut of pork. My bf and I kept finding little itty bitty bones from the chops...or maybe use boneless pork chops. Anywho, very good....i added cornstarch and 1 cup water to the sauce (after I took the meat out) and let that heat up on high heat (still in the crock pot) to get a little thicker sauce to drizzle on top. Served with steamed jasmine rice and steamed cabbage. Oh and I didnt add ANY extra salt. All that soy sauce is salty enough!

Squash and Sweet Potato Soup

I cant give this recipe a true rating because I made a few changes of my own. I roasted sweet potato (not yam), carrot, acorn squash, onion and garlic in the oven for about an hour. I added this to a pot and heated over low heat with chicken stock for about 20 minutes. I dont have one of those hand blenders (I really should invest in one of those) so I transfered soup into my blender and gave it a 15 second puree, poured it back into the pot and seasoned with grated ginger, red pepper flakes, pepper, dried dill weed and curry powder then let it simmer for another 20 minutes. Poured in some half and half until I got the creamy consistency I desired. Heated for another minute or two. I will definitely be making this again. YUM!

Garlic Chicken Kabobs

These were great! I put them in pita pockets and we dipped them into the garlic sauce. This was amazing and I am adding it to the Favorites folder so I can make it again and wont forget about it! I served this with grilled veggies from my garden. Healthy, organic and delicious!

New Potatoes with Caper Sauce

These were good. I timed dinner badly the night I made these and was in a hurry to get dinner on the table. The potatoes came out under cooked and were disappointing. It was my fault so I cant rate this recipe unfairly and say it was terrible. It was defiantly my fault. Want to try this again cooked right. Sauce was yummy.

Pepperoni Crisps

These were alright. I followed this exactly and turned my back for a couple of minutes after I sopped up the oil and there was smoke coming out of the oven! It was very late at night and I was so worried the fire alarm would go off and wake everybody up. I grabbed the cookie sheet and ran with it outside. They were burnt...so I figured it was my fault. So i trashed them I made a 2nd batch. I sopped up the oil after a few minutes and they immediately started to smoke again and once again I had to run outside with the smoking pepperoni! This time they were NOT burnt after everything was said and done my house was smokey and smelled like pepperoni. I wont make these in the oven again...just not worth it.

Killer Artichokes

These came out great! I did make a couple changes. I used EVOO instead of butter (much healthier). I omitted the scallion and added parsley as well as lemon juice. I will defiantly make these again. Good thing boyfriend wasn't home for my garlic breath!

Braised Lamb Shanks

This was good. I used fresh tomatoes from my garden instead of canned. I didn't have lemon so I added a small amount of lemon juice. Only complaint I have is I think Im not a fan of lamb shank. Ive bought lamb blades at the store before and I prefer those instead. Will make this again with lamb blades.

Connie's Zucchini 'Crab' Cakes

I have an abundance of zucchini growing in my backyard right now. I thought this was a good way to mix it up. My boyfriend and I both enjoyed these. I baked them as other reviewers recommended. I also didnt use just seasoned bread crumbs...i used panko and stuffing mix (cornbread) as well and they held together nicely. In addition I whipped up a light sour cream sauce for these. Only sour cream, old bay, and a little water (to thin) was used...then garnished with chives. yum!

Honey Mustard Grilled Chicken

This was very good. Im not really a honey mustard fan but I asked my bf "bbq or honey mustard" and thats why I made it. I used stone ground dijon which gave it a pretty appearance. Yum yum.
