Slow-Cooked Habanero Chili

4 stars with the caveat that I had to use a lot of extra spices: cinnamon, chili powder, chipolte chilli powder and cumin. I also added ~ 1 cup chopped onion. Used one fresh habanero and one dried chipoltle pepper as I couldn't find dried habanero. Added ~1 cup of chicken broth--and it was still super thick! Final verdict: good, like that it had more veggies, but isn't going to be my traditional go to chili recipe.

Pumpkin Black Bean Soup

I double the ham and onions and added the ham at the beginning. As a result, I definitely tasted the ham unlike some others - like a black bean ham and beans! Added some cumin and slap your mama spice for a bit more flavor! I thought it was delish!

Chocolate Cavity Maker Cake

I didn't have the liqueur so used some rum instead, but mine just didn't have the moistness that everyone else alluded too. May have over baked - cooked for ~25-30 min for cup cakes vs. the bundt pan.

Easiest Peanut Butter Fudge

Didn't turn out for me - I was not able to incorporate all of the powdered sugar as described and ended up with something I had to form into cubes by hand to keep together. Then coated in melted chocolate + peanut butter chips and it was edible, but I wouldn't call it fudge!

Cream Cheese Frosting II

Tip - make when no one else is around so you don't have to fight for licking of the spoon, bowl, etc!! I added 1 tblsp of cinnamon and 1 tblsp vanilla (vs. 1 tsp) for a perfect topping to Sam's Carrot Cake from this site. SO GOOD. Definitely now my go-to for cream cheese icing but will read some of the tips in the reviews for getting the butter a bit smoother next time. Covered 36 cupcakes perfectly.

Slow Cooker Chicken Mole

Update: I froze individual portions of this with some brown rice for lunches and have found I really like it. Perhaps the freezing / microwaving intensified the flavours? Followed the recipe mostly to a T, but didn't suit my taste buds right when cooked, which I attribute more to just not liking mole all that much. If I were to try it again, I would add more Chicken - as written it would have been too sloppy for a taco in my opinion.

Quinoa with Carrots and Raisins

I had leftover already made quinoa, so I made this dish in a wok more like a fried rice almost. I was also lazy and didn't want to grate the carrots and just tried to chop them small - I would grate next time as I didn't get them cooked quite enough. I added additional carrots too. I had cooked the quinoa with some red pepper flakes which added a nice smidge of heat.

Vegan Black and White Bean Soup

I'm not a Vegan, so I added ground turkey breast. Good flavors, also used less liquid so it was a bit heartier an stew-like.

Pineapple Fried Quinoa

I also added ham like another reviewer for more protein which was great. Yummy with a good mix of flavors. Not quite a 5 star for me - I tend not to measure too much and just toss things in and ended wishing I had added a bit MORE spice.

Oatmeal Apricot Squares

Easy - used homemade cherry jam that I had on hand and it was good in that it wasn't so sweet. I had a little bit of crumbling problems but they did stay together for the most part.

Chicken Salad

Excellent! Used Foreman grilled chicken breast and low fat mayo to make it a bit healthier. Served "open face" on slices of french bread for a ladies only afternooon party. Leftovers I'm using in a wrap w/spinach and cheddar cheese. It's very chunky and yummy!

Di's Delicious Deluxe Deviled Eggs

Good, I like the addition of the celery and onion. Just seemed something missing that you usually get in a deviled egg - no vinegar in this one? But for those who don't like vinegar these are a good alternative. As others have mentioned, make sure the onion and celery are chopped VERY WELL!

Ham and Pineapple Pinwheels

excellent - I also just used regular cream cheese and used and hand mixer to get the cc and pineapple to mix well. I didn't have issues with too much juice and didn't spend a whole lot of time draining stuff. Nice departure from the traditional salsa based pinwheels!

Green Onion Ranch Dip

Really good! I was dubious reading 18(!!) green onions, but I really enjoyed this and it was a twist on the "normal" sour cream and ranch dip with the freshness of the green onions. I would put another jalapeno in next time to really bring out some spice - I don't think it would overpower the other flavours. Served with veggie dippers.

Nacho Popcorn

Made 5x the recipe as written for a party. I would make again, but with two adjustments (1) less butter, the popcorn became pretty soggy, and I don't think it was needed (2) add some cayenne for more kick (I like things spicy!) Tip for mixing up (especially in a big batch) is to use a bag (e.g. clean trash bag). Put the popcorn then toppings in and SHAKE - so much easier and cleaner than trying to mix in a bowl!
