Avocado, Tomato and Mango Salsa
Excellent! I scaled up the recipe, but tried to keep the volume of mango, tomato, and avocado equal to each other, because I thought balancing the colors would make it more visually appealing. So I used 2 mangoes, 3 avocados, and enough quartered cherry tomatoes to make it look balanced. Took it to a pot luck and it got devoured, even though the habanero pepper I used made it very spicy. Only criticism is that it takes a long time to make--so much chopping.

Marie's Easy Slow Cooker Pot Roast
This was the first thing I made in my new slow cooker. It's just okay without the gravy, but with the gravy, it was amazing.

White Bean, Spinach, and Barley Stew
Easy to make. We brought it to a potluck and our friends nearly finished off the whole bowl. I wonder if the people who found it bland might have used plain diced tomatoes rather than Italian style. I found it it have lots of flavor, although it was a bit on the salty side for me. I think next time I'll look for low salt Italian-style tomatoes.
