Pumpkin Bread IV

I used a 75/25 ratio of applesauce to oil, and the bread came out wonderfully! I baked for about 55 minutes and might decrease the time by five minutes next time. Like others suggested, I would add a little more spices, but that's mostly a matter of taste. I might also reduce the sugar by 1/2 next time to allow the pumpkin and spices to really shine. Great recipe!

Baked Spaghetti

I would strongly suggest NOT using cottage cheese. It tastes fine but looks horrible. Overall, this is a basic, simple, but tasty recipe

Best Brownies

I usually add a handful of melted dark chocolate chips to the melted butter. It gives the brownies a richer, more sophisticated flavor. I've also experimented with using all white vs. 1/2 white and 1/2 brown sugar, and both work well

Cream Cheese Cookies I

I made these as drop cookies and added 8 oz cream cheese as others have suggested. They had a very strong cream cheese flavor, so I may try to add jam and/or white chocolate chips next time.

Fudge Truffle Cheesecake

AMAZING recipe! It does make a lot, though; I ended up having a huge 9-inch cheesecake and another smaller one. I might reduce all the ingredients by 1/3 next time.

Italian Wedding Soup I

I used spinach instead of escarole, pre-cooked the meatballs in a frying pan until golden brown, and then threw everything in the slow cooker to simmer. Delicious!

Applesauce Oat Muffins

I ended up with 6 average-sized muffins. I also substituted apple sauce for the oil, used whole wheat flour, and added a handful of fresh strawberries. Nearly fat free and delicious!

Suki's Spinach and Feta Pasta

Adding shrimp or chicken to this recipe also creates great flavor. Like others, I added more spinach, and it was wonderful.
