During the day, I'm an administrative assistant - not my ideal line of work, but after college, I realized that I didn't want to be a teacher, and I'm still forging my new path. I'm a stepmommie of two great girls, and the wife of a chef who is finally realizing his own leadership skills with his crew.

I whip up a MEAN stir-fry...it's the one thing that I'm not afraid to experiment with.

My mom is an advertureous cook - growing up, we never had the opportunity to get tired of a paticular dish...because it was rare that we had ever repeated a dinner in a 2-3 month time span!

Almond Wild Rice
I bought a brown/wild rice blend (wild rice is EXPENSIVE!), and followed the directions on the bag in cooking it, which means I didn't need the full 5 1/2 cups of broth. It turned out great - served it with cranberry chicken at a dinner party, and people could not stop talking about it. Next time I will add some more golden raisins and some green onion/shallot. As far as leftovers are concerned, follow the other tips here and add a little broth or water to it before heating, otherwise it gets really dried out. Overall, though - a great side dish!!!

Penne with Chicken and Asparagus
Started by following the recipe, but I had used the Barilla Plus (whole grain) penne. As I was preparing the asparagus/chicken broth mix, I realized that I was not going to have enough liquid to work with the pasta, so I added another cup of broth. It improved the final results somewhat, but there was still something missing - I think that the suggestion of using roasted red peppers and onion is a great idea (unfortunately, I didn't have the time to really improvise on this paticular night LOL). All in all, though, this was a great light dish, and tasted GREAT with the whole-grain pasta.

Mom's Zucchini Bread
Yum! And so easy to make... I added 2 tsp nutmeg, reduced the sugar by a 1/4 cup, and replaced half of the oil with applesauce. Only ended up using a teaspoon of vanilla - ran out! :) A keeper for sure!
