Almond-Topped Fish

Freaking fantastic! The flavors didnt overpower the fish at all and the toasted almonds were a perfect touch. I used more parsely than it called for, but that was the only change. Definitely a keeper.

Lime Garlic Chicken

Just wonderful! I wasnt sure about the flavors when I started, but the garlic and lime melded perfectly. I cut down on the flour and butter, but added dabs of butter as needed while the chicken was cooking. My boyfriend actually praised the dish!

Winter Vegetable Hash

I tweaked the dish based on what ingredients I had (bella mushrooms, butternut squah and green beans) and loved it. Obviously a very versatile recipe, and why I gave it five stars. Love the shallot/garlic combo. I also found that the winter squah is easier to peel and dice if you first cut it in half and cook it in a 400-degree oven on a greased cookie sheet for about 5 minutes.

Corn with a Kick

A very tasty solution to my bordeom with reheating frozen corn. I didn't use the green pepper, but the onion, tomato and spices still added a great flavor. It definitely has kick to it!

Cold Roasted Moroccan Spiced Salmon

Oh so good. The seasonings are a different way to serve salmon and don't overpower this flavorful fish. I served it still warm and it was fantastic! Definitely making it again.

Cranberry Sweet Potato Bake

Delicious! I omitted the butter in favor of more o.j. and might not use the granola next time, but this dish was a great addition to Thanksgiving. It's great, different way to make sweet potatoes.

Baked French Fries I

These had a great zip to them! I added a bit of sweet paprika with a sprinkling of cardamom to sweeten these slightly because I added in a sweet potato with the rusetts. They took awhile longer to cook for some reason, but were well worth the wait.

Apple Hermits

Absolutely wonderful! Tastes just like the hermit bars my mom got for us from the bakery. Love the cloves. Making the cookies was sticky, and I found it's easier done as a bar. So good, though.

Apple Crumb Bars

They certainly live up to their name, but these bars were devoured. I immediately got requests for more. In baking them, I left it in the oven for 5-10 minutes longer because the appple mixture hadn't set but I found that it does once its out of the oven. Turned out to be very messy to cut, but I think that had more to do with how I prepared the bottom layer. Definitely going to try these again.

Fresh Apple Cake II

Excellent! Not exactly a cake, but tastes good no matter what you call it. To make it a bit healthier, I used 1/4 cup of veg oil and a 1/4 cup of applesauce as a substitute. Also cut the sugar by using 1 1/2 cup with the 1/2 cup coming from Splenda's brown sugar blend.

Stuffed Cabbage Rolls

Aside from the fact that I had an incredibly hard time keeping the cabbage leaves in tact, the dish was fairly simple to make. Time-consuming, but simple. It was the first time I made, and ate, cabbage rolls. Loved it.

Pancho Villa Baked Tilapia

The fish came out great - soaked up the flavors and seasonings wonderfully! The cilantro was a good pairing with the lime. I put the packets on the grill like another reviewer, used fresh tomatoes and had it with a side of kale. A nice, quick, easy meal!

Easy Honey Mustard Mozzarella Chicken

This has become one of my staple recipes, but I omit the bacon and cheese. It's fast, simple and so tasty. The chicken comes out moist and I like being able to adjust the honey and mustard ratio per my tastes. I tend to pair it with steamed broccoli and a baked sweet potato.

Seared Sirloin Steak with Garlic Butter

Simple, yet it makes an elegant meal. The garlic butter was a big hit - we spread it on the bread too. A side of asparagus completes the dish. I loved all the flavors and will definitely make it again, perhaps adding mushrooms to the sauce. Thanks for the recipe!

Mini Cheesecakes III

I'm not the biggest fan of cheesecake, but loved these delicious little bits and my boyfriend also devoured them. I used crumbled vanilla wafers as the crust instead of the graham cracker mixture - taken from a similar recipe. The lemon zest is what makes this dessert. I topped the cakes with balsamic-sauteed strawberries. Perfect. Thanks for the recipe! It's easy to make and great for when you want a small batch.

Gobble Up Granola Snacks

I made these for a camping trip with my family and the entire batch went in two days. The only change I would make next time is add more peanut butter, and possibly add other dried fruits for variety. The directions fail to mention raisins, but it was easy enough to mix them in after pouring the peanut butter and sugar mixture. They were a little sticky and some were hard to keep together, but the bars certainly lived up to their name!

Chewy Coconut Cookies

The batch comes out just like the name! I kept some plain, added chopped almonds to a few and dipped some in milk chocolate and others in white chocolate as other reviewers did. Those were the ones that went the quickest. The batch did come out flat, but I'll try refrigerating the dough, per a reviewer's suggestion, next time.
