The best scone recipe ever! However, there is always room for improvement. To make this a vegetarian recipe replace the egg with 2 tsp ener-g egg replacer. To make this a lower calorie recipe: 1.) substitute half the sugar with Splenda 2.) use fat-free sour cream 3.) reduce butter to 3/4 cup 4.) *use Ener-G Egg Replacer (also makes this a vegetarian-friendly recipe)

Vanilla Port Poached Figs with Honey Cream

This is an awesome dish!!! In addition to the vanilla extract I added half a vanilla bean. If anyone wants to try this and has never worked with real vanilla before: Cut the bean in half and store the remaining half; cut away the tip of the other end; using a small paring knife, insert the tip of the knife, blade-up, into either end of the bean and slice along the flat side (this motion should be slow and careful to avoid cutting yourself); using the knife, carefully open the split seam using one finger to hold open the section closest to you; using the sharp end of the blade scrape away all of the tiny seeds within the open bean (they are smaller than a grain of sand); repeat the last step as many times as necessary to remove all the tiny seeds, turning the bean around to get at the seeds where you hold the bean open; the seeds AND bean all go into the port base to simmer with the rest of the ingredients.

Super Easy Spinach and Red Pepper Salad

Great recipe...after a bit of improvement (no offense to the original recipe, but I always spruce up every recipe I encounter). First off, I added a few leaves of fresh basil torn up. Next, I also added three sliced green onions. I also added a dash of salt. Although, I didn't want to deviate from the original recipe to much, a few minor additions were what gave this already tasty recipe a personal touch. Thanks to the contributor for this new favorite!

Apple Cranberry Salad Toss

Was surprisingly delicious. :) I did change the porportions since it makes so much, & I would and will be chunking the apple from now on. The slices of apple are just a tad to fork-awkward and would serve better as a garnish/finish, leaving the bulk of the apple chunked.
