About this Cook
Hello my name is Andrea~ I live in FL and I LOVE to cook! I come from and Italian family and I always had a home cooked meal every night! I love cooking for friends and family. I sit online all the time looking for something challenging to make. I know it's strange but I love it! I have about 50 or more cookbooks! When I moved in w/ my roommate they teased me because my spice collection took up and entire cabinet!
My favorite things to cook
I love to make anything that has chicken in it! I have a cookbook of just chicken recipes and it's awesome! I have made about half of them and I always add my own style to the recipe. I love to make dishes that are more complicated than easy. My friend use to tease me about how I always made something the hard way. I am not into baking but I did make my first apple pie from scratch for Christmas and it was a HIT!! Everybody loved it. I also made my first quiche and that was a hit as well! I also love French dishes! I love the sauces and detail they use in their foods. I am a big fan of fish recipes lately it'a been mahi mahi. I have a great recipe I will have to share sometime. I kind of like to keep that one to myself but we'll see!
My favorite family cooking traditions
Well I would have to say bread. My entire family is known for their home made bread skills. Yes I am talking w/o a bread machine. I once made white bread for Thanksgiving and my friend was so amazed he called his mom to tell her I wasn't using a bread machine! It's not unusual for me to make bread every weekend. To me it's easy and takes no time at all. My mom every year for the holidays hands out her famous loaves of bread. My favorite is the Dilly bread! I have since started doing this as a gift myself. People remember it and look foward to it every year.
My cooking triumphs
I have about 3 or so. I never bake so I made an apple pie from scratch and a quiche for Christmas. It's not that they are hard I just don't like baking. To me it's not challenging. Well I have to start baking now because my two pies wee a major hit! They were literally gone in seconds. I also made this Macadamia Nut Encrusted Mahi Mahi. It was my own variation from a restaurant in Orlando. I thought this seems a bit challenging so naturally I did it. I was so happy with the out come I even took pictures! I will post those as soon as I find them. Every time I make this it's a hit as well.
My cooking tragedies
Wow I have some of these but haven't we all?! The only one I can think of right now is the following. I was about 13 and learning how to make Dilly Bread. I think I let it sit too long because it started to rise out of control! To this day it's a family joke about my bread tragedy. Now my Dilly Bread is perfect.

Parmesan Chicken
This was fast and easy! I did however add melted butter to the bread crumbs with some Italian seasoning and garlic. I baked it for 25 mins at 375.

Impossible French Apple Pie
This came out pretty good but I did have a couple problems. This recipe doesn't say which amount of butter goes where and if you don't bake alot it's confusing. I think the submitter should have stated which amount of butter goes where..Also the strussel topping did NOT crumble and I have made crumble topping before. I tried to adjust it but it didn't work. Instead my boyfriend and I just spread it on top which was also pretty tasty. Other than these two problems it was pretty good.

Chicken Marsala
This was delicious! I however added more marsala and a little bit of cream(about 1 tbs). I used veal as well as chicken since my boyfriend loves veal and it was just as good. I will definitley keep this recipe.
