Avocado Egg Salad
This was a great way to reduce mayo in egg salad & give it a heightened taste. I used my own recipe but did reduce the light mayo, then added the mashed avacado which I combined with some fresh squeezed lemon juice. Used 12 eggs, 1/2 c mayo, one avacado, 2 Tbls Dijon, 3 Tbsl pickle relish & all my favorite spices plus S&P. Yes, you must add paprika & dill to make it perfect in my opinion! A dash of chipotle red pepper kicks it nicely. Easy & delicious. Served on bed of romaine & croissants to 10 people for luncheon. All loved. Thanks for the avacado idea!

Coffee Shop Fudge
The overall taste is good but the texture is a bit loose. I did cut the cinnamon to 1/2 tsp. as others suggested & used walnuts as I didn't have pecans. I will make again but perhaps use a bit less chocolate chips or less milk for more density.

Snickerdoodles II
These are very yummy! My six yr. old told me better than his favorite, homemade chocolate chip cookies. Big praise. I did use half regular sugar & half Splenda. I also used half butter & half shortening. I added 1/2 tsp. extra cinnamon to the dry ingredients, too. To hasten the cooking process I baked in convection oven at 350 so I could do two trays at once. They took about 9 mins. This is a keeper recipe.
