Marinated Grilled Shrimp

I'm rating this 5 stars to get your attention, because as written, I think the tomato sauce makes it a bit bland. I was going to add Chili Sauce, as one reviewer suggested, but found that I had none on hand. Hmm--what to use? Well, I decided to use half ketchup and half Tiger Sauce, which you can buy in your grocery store near the hot sauces. It's a delicious spicy/sweet sauce. I marinated the shrimp on Saturday, and grilled it on Monday. Well, let me tell you, the flavor was out of this world. I served it over "Orzo with Parmesan and Basil" from this site, and my husband and I are still talking today about what a wonderful meal we enjoyed last evening. It truly was to die for and so delicious over the orzo, which I made exactly as the recipe is written. Give it a try, because these shrimp truly were scrumptious!

Apricot Tea Cookies

These are delicious; however, not all my cookies look as pretty as the ones in the photo. I actually don't love baking, and since these were the last type of cookie I made on a long baking day, maybe I was just a bit pooped out and overwhelmed. They are worthy of a second try, but next time, I'll only concentrate on one recipe at a time. (P.S. Check out the recipe and my review of rumballs. Now, this is a super simple cookie recipe that is quite delicious and you don't have to be a baker!!)

Healthy Garden Salad

What a healthy and delicious salad!!! I made a batch to bring to work for lunch, and I love it! You can add extra veggies in there, too, and spice it up any way you like. I had never tried edamame before, and WOW!!! Yummmmmmm! Who knew? Thanks!

Chickpea Salad with Red Onion and Tomato

Chinese Cold Pasta Salad

Loved this salad! After you boil your noodles, drain them and use the hot stock pot to melt down your peanut butter; then add the other sauce ingredients. It works perfectly, and there is no need to haul out the blender. Add your noodles and other ingredients into the pot and mix well before pouring into a serving bowl. I added some shredded carrots and cucumbers, too. Delicious!

Grilled Asian Chicken

This is a very simple and delicious recipe!! (Hubby doesn't like ginger, so I didn't add it, but I did throw in a little red pepper flakes.) We enjoyed this dish with "Green Bean Stir-Fry" from this website and sweet potatoes. What a yummy, healthy and easy meal! Thanks!

Zesty Red Potatoes

These potatoes are out of this world! I cut the butter in half and added a little chipotle shredded cheese at the end. Hubby and I both gobbled them up. FYI--the Sargento Chipotle Cheddar blend cheese is really good! It's got a real kick to it and a great deal of flavor. I've added it to many recipes, including Zucchini Boats (from this site). They are yummy, too.

Bessy's Zesty Grilled Garlic-Herb Chicken

Fabulous! I cut the sugar in half and omitted the safron. I thought it was still a bit sweet, but my husband disagreed. It grilled up nice and crispy on the outside and moist and flavorful on the inside. This one's a keeper! Thanks!

Absolutely Fabulous Greek/House Dressing

Mmmmmmmmm!This is one yummy dressing! I was going to add fresh garlic, but decided to follow the recipe exactly as written, and I'm glad I did. It's fabulous! I tossed it with a salad made with baby spinach, romaine, tomatoes, red, yellow, and orange peppers, artichokes, green onions, black olives, zucchini, cucumbers, mushrooms and tomato basil feta cheese. I can't tell you how good it is and healthy, too! Thanks for the recipe!!

High Temperature Eye-of-Round Roast

Holy Cow--it really works! I followed the recipe just as written, and we had a delicious Sunday dinner. The roast was perfectly pink in the middle as promised. I wonder if this works with other cuts of meat??? Thanks for this unbelievably awesome and easy recipe!

Super-Simple, Super-Spicy Mongolian Beef

This dish is fantastic!!!! I added frozen Chinese vegetables and served it over whole wheat angel hair pasta. Hubby and I practically licked our plates clean. (FYI--I only added a teaspoon of the red pepper flakes as others had suggested. I'd try it this way first, and if you like it hotter, add more the next time you make it. We like things hot, and this was perfect.) Thanks!!!!

Szechwan Shrimp

This was an absolutely delicious recipe! I doubled the sauce (didn't use any ginger, as hubby dislikes it), added a package of frozen veggies (broccoli, carrots, water chestnuts, pea pods)and served it over whole wheat angel hair pasta. Hubby said he could eat it every week. It's funny, because I tasted the sauce before cooking, and there wasn't much kick to it, and the ketchup really stood out. However, once it was mixed with the other ingredients and cooked, it took on a whole different taste, and it was really spicy good!! Thanks!!

These cookies are AWESOME! They are sooooo easy to make and really good!! I used Myers Dark Rum, and I have to admit that I added a little more than called for in the recipe! What a punch! Blackberry Spinach Salad

Who would have thought that these ingredients are absolutely delicious together? The only thing I didn't have was the edible flowers, which would look really pretty if you were serving it at a luncheon. It's great all by itself and also wonderful with balsamic vinaigrette. Thanks for a new and exciting salad to add to my recipe box!
