Cajun Crabmeat Au Gratin

Delicious but time consuming. That is why I only gave it four stars. Be sure you use premium quality crabmeat and go light on the salt, because the cajun seasoning is quite salty. My husband thought this was one of the best Crabmeat Au Gratin dishes he has eaten.

Chicken Noodle Casserole II

This was certainly very easy. Some reviewers seemed to have a concern about the soup. You need a total of 2 cans of soup. Each one is Campbell's Cream of Chicken & Mushroom condensed soup. I put the onions in the bottom of the casserole and layered the noodles next. Mixed the wet ingredients and put them over the noodles and finished the rest of the recipe. I wanted to make sure the noodles were covered. I was surprised the noodles cooked and were tender.

Six Can Chicken Tortilla Soup

Followed directions and recipe amounts as listed. I did put the chips on top of the soup instead of in the bottom of the bowl. Very good and could not be easier. I made half the recipe and used the left-over half can of tomatoes and green chili's to make queso.

Red Potatoes with Beans

California Chicken Spaghetti

Great dish. Used Zatarain's Blackened Seasoning and reduced the amount by half. If I had used the full amount it would have been to spicy. Did not need to add salt because of the salt in the blackened seasoning. Also, reduced the amount of spaghetti in the dish by half. I used fresh basil instead of dried and low fat feta. If I have to make revisions to a recipe I do not give it five stars. The flavors in the dish complemented the fresh ingredients. A good low fat dish with great flavors. Will definately make again.

Shredded Brussels Sprouts

This recipe was delicious. I did as others suggested and quartered the Brussel sprouts instead of shredding them. We even ate the leftovers cold, right out of the fridge.

Yummy Sweet Potato Casserole

I am a little late in writing this review. I made this dish for Thanksgiving instead of my traditional canned, smashed, sweet potatoes with marshmellows on top and it was delicious. This is now my sweet potato recipe for holidays. I did follow suggestions to bake the sweet potatoes instead of boiling them. Thanks for the recipe and suggestions in the review section of this web site.

Mexican Chicken Kiev

Great recipe except it was more like Mexican/Italian Chicken Kiev due to the Italian breadcrumbs and Parmesan cheese. Next time I plan to use regular bread crumbs and omit the Parmesan. I served this with traditional Mexican side dishes.

Oven Barbecued Beef Brisket II

Authentic Mexican Enchiladas

I was looking for somthing to do with a bag of chile de arbol peppers and was quite pleased with this recipe. I agreed with the other reviewer on, how do drained peppers, garlic and salt make a sauce. So I did not drain the water from the peppers. After making the adjustment, I would give it 4 stars. Good summer recipe. Thanks for sharing.

Calabacitas Con Queso - Zucchini with Cheese
