We really liked this for a change from our regular New Year's Day cabbage. A couple of days prior to making this dish I made sour cream, garlic mashed potatoes and doubled the recipe to use with this one.

Penne Pasta with Spinach and Bacon

Wow. This was great. I used thick pepper bacon and added more than the recipe called for. Since I used extra bacon I took some of the bacon grease out. Unfortunately extra bacon makes extra grease. For the pasta I used Barilla Plus Penne Pasta. I served it with garlic bread and passed a grater and block of Parmesan Reggiano around the table.

Acorn Squash

I did not unterstand the instructions to put the remaining squash over the other piece (one side would not have the goodies in it). I left the squash right side up and divided the 2 tbs of brown sugar and 1 tbs butter between the two halves and left them on the cookie sheet. It turned out very good. The cooking time on the recipe was correct.

Divine Hard-Boiled Eggs

Great directions. I never know how long to cook my eggs. Sometimes they are undercooked in the middle and sometimes they are overcooked and greenish. This is perfect. Thanks for making it so simple.

Spinach Lentil Soup

Spicy and good. I used Pace medium salsa. I reduced the amount of spinach to 8 ounces and added some nitrate and nitrite free canadian bacon which I chopped and added to the end of sauteing the onions and carrots. I topped each bowl of soup with a dollop of reduced fat sour cream.

Blackened Shrimp Stroganoff

This is like a dish I order at French Quarter Bistro. Now I can make it at home with fresh gulf shrimp. For the Cajun seasoning I used Zatarain's Blackened Seasoning and it was to hot. The second time I made it I was able to find Cajun seasoning. Zatarain's was better. Next time I will use a reduced portion of Zatarain's and will also reduce the amount of roasted red bell peppers.

Roasted Garlic Cauliflower

This was wonderful. Add the garlic during the end of cooking time or it will burn. I am always looking for ways to get fresh vegetables on the table that people will eat. Thanks for sharing the recipe.
