Artichoke Chicken

In an attempt to tidy up my recipe box I realized there are some recipes that I have overlooked. That's what happens when your recipe box is bursting with more than a couple of thousand saved items. So, I finally made this chicken dish served with Garlic Spinach (AR) and it made for a delicious meal. There is absolutely no exaggeration in the quoted 35 minute prep and cook time, allowing this dish to be enjoyed any day of the week. I used marinated artichokes and used half mayo/sour cream. A reviewer had suggested toasting some Panko crumbs and sprinkling them on top. I might add that the next time. I was very careful to drain and even press excess liquid from the artichokes but still had a small amount of water in the baking dish described by some reviewrs. I say "just never mind" as it in no way took away from the taste and texture. I would suggest that the Parmesan cheese be of the best brand affordable or at least freshly grated. I'm pointing this out as the flavour of the cheese comes through in just the most perfect balance and therefore this might be where to spend a little extra if possible. At first I cringed at the price of a fairly small piece but it really lasts when stored correctly. Thanks for posting a great recipe.

Garlic Spinach

Delicious! Done in a flash! Healthy and Economical. This made a perfect side dish to Artichoke Chicken (another yummy AR recipe). There's just something about the wonderful aroma of butter garlic and lemon juice. Oh...the spinach turns a lovely bright and fresh green colour too - So Kudos all around.

Jennie's Heavenly Slow Cooker Chicken a la Cynjne

How nice to be surprised. I haven't always been happy with crock pot meals but this is a recipe that I will keep and make again for sure. Rather than cut back on salt (a few reviewers said "too salty") I used unsalted butter and paid attention to how much salt there was already built in the called for ingredients that I cannot control - the soup for example. I'm a Kosher salt fan as I find the flavour is less harsh and more pleasing even when using less. As a personal preference I used half white wine and half chicken broth. I was unsure if 4 hours on low would be long enough so I began at high for about an hour then turned to low for the remaining time. The chicken was very tender and the sauce smooth. I served it over basmati rice with a broccoli side. Delicious! The following night I made egg noodles serving them with the remaining sauce. Add economical as another bonus. Thanks so much for posting.

Beginner Chicken and Dumplings

"Beginner" ?? I continue to learn that many of the simplest recipes are the best. The dark meat of the thighs make a difference as they add to the flavour. I prepared egg noodles for those who like it served that way. ME. Very good and very easy.

Sweet Chili Thai Sauce

Do not add cornstarch directly into any hot liquid. It will quickly turn into a gooey lumpy mess. Add enough water and stir to dissolve the required amount of cornstarch. Whisk while it's being added and there shouldn't be any lumps. I made a few Chinese dishes for New Year's dinner and made some different sauces for variety. I found the vinegar overpowering. The base flavour of this sauce was good enough that I may have another go, adjusting the amount of vinegar. Thank you for posting.

Spanakopita (Greek Spinach Pie)

I've been wanting to make spanakopita for a long time but unfortunately it didn't seem to catch any one's interest. And then.....there was that dreaded S ingredient. I have at last graduated from the school of "Putting Everyone Else First" and my choices now hold some menu merit. Great flavours in the spinach cheese filling mix and the phyllo doughs texture and appearance. Thank you for sharing a great recipe SILVERWOLF.

Restaurant Style Chicken Nachos

This makes quite the presentation. Very good taste and easy to make. Impressive. My only suggestion would be to sprinkle a layer of cheese etc. over half of the chips in addition to the top only. I served this with guacamole and tacos. A great meal.

Black Bean and Couscous Salad

A great recipe to make for those trying their hand at couscous for the first time. Reviewers who made changes did so without veering too much away from the original recipe. I would call that a sure sign of something delicious. Quick, healthy and versatile, this is now amongst my very favourites. My only regret is that it took me so long to find and try it. Thanks Paula!

World's Best Lasagna

Like many I have a very good lasagna recipe that I have used for years. Once in a while it's fun to change it up. I've tried a couple of the well rated others here but nothing was a great improvement over mine. I had thought this recipe was one I had tried, but it wasn't. This is simply fabulous. The sausage is wonderful in the sauce, subtle but noticeable. The fennel is another added flavour hint making the sauce taste homemade and unique. I like everything as is but do agree that the salt could be cut. I must commend the reviewers who explained how to build 3 layers. Now why didn't I think of that?? Liking the taste of regular lasagna pasta noodles over "oven ready" I have been using the soak in hot water method for a long time and would never do it any other way. Thanks so much for this wonderful addition to my menu

Garlic Parmesan Orzo

Wow! This was even better than I expected. Perfect in its blend of flavours and I could taste each one of them. I cooked up the orzo, had the garlic and fresh parsley minced, cubed the butter, and grated the Parmesan in the morning. Doing this ahead I was able to have this dish ready and on the table in under 15 minutes. Using unsalted butter gives the orzo a wonderful silky and creamy texture. It may seem like butter overload but the cooked orzo is double the size it was when uncooked. Everyone thoroughly enjoyed this side.

Sweet Russian Cabbage Soup

After placing the meat in the skillet to brown (1st step), I began to question if browning was indeed part of the directions. Upon rereading; It isn't. I see from the reviews, some people chose to brown anyway. A little too late in preparation for me to change, I just carried on. At first taste I found my error to have no negative effect because the resulting soup was delicious. I tend to prefer savory/salty rather than sweet so I took advice from a few reviewers and upped the vinegar and trimmed the sugar. It was interesting to taste the the effect the added vinegar made. I now understand what many reviewers mean by the tang. A whole head of cabbage was a little much. I will cut this amount if I have another go. I added a small amount of fresh spinach in the last 10 minutes. Might as well get some extra nutrients the easy way. This soup is a great example of how a few personalized changes do not deter a simple, solid recipe. Thanks for posting.

Shredded Brussels Sprouts

This is the 2nd Brussels sprout recipe made in my quest to place these little gems in the spotlight where they belong. This was easy to put together and made for a hearty and attractive side dish. The pine nuts added a unique texture and hint flavour. I received a few "not bad" nods from those who, at times grudgingly, tolerate this veg. but those haters warding the sprouts off with crossed fingers didn't get past the first bite. The consensus is that if you really don't like the flavour of this unfortunate scorned morsel, it's unlikely that you will be wooed.

Turkey and Quinoa Meatloaf

It's such a satisfying feeling to enjoy a moderately reviewed recipe with an alluring star grade. This dish is one you will want to pass along to family and friends who normally don't think healthy and delicious is ever synonymously possible. With good direction and great balance and pairing of ingredients this recipe was easy and almost fun to put together. Great flavour is apparent with the very first bite. Soon we were all doing the "nodding with mouths full" dance. Thanks for posting Drew. Loved it!

Slow Cooker Chicken Taco Soup

Yet another highly rated recipe that was just so so for me. I can't quite put my finger on it but there was something off a little. I would have guessed the beer as the culprit but no one, not even the beer-haters claimed to taste the beer at all. With that said, the suggested toppings of sour cream and cheddar cheese did greatly improve the flavour. In addition to these toppings I added a very small amount of thinly sliced green onion and fresh cilantro.

Buttery Corn Bread

The thought of cornbread has never really excited me. The few times I've made a batch resulted in a rather boring and dry side to chili or a bread/roll replacement to any Mexican and Southern US themed dinners. I needed something to go with the slow cooker taco soup I made for dinner this evening and I just wasn't in the mood to make bread. This was to be the last time for a cornbread option. With a history of tossing most leftovers away I chose to 1/2 the recipe - just in case- I followed instructions and baked it for 23 minutes. After testing I let it cool for 15 minutes prior to cutting it into squares. After just one bite, everyone agreed that the taste was exceptional. The soup was supposed to be the star of tonight's dinner but quickly this wonderful cornbread stole the show. DELICIOUS!

I made these by family request for an Autumn-like dessert. I wasn't that keen as the spices aren't a favourite flavour for me. Wow! What a wonderful delicious surprise. I was able to make 30 cupcakes - Bonus.

Cream-Braised Brussels Sprouts

Oddly, Sprouts and spinach were the only vegetables my mother could get me to eat. Often considered one of the most disliked of vegetables, Sprouts are full of vitamins, inexpensive when bought in season (late Autumn and Winter) and very easy to prepare. I like the way they look when served. Brussels Sprouts add an interesting texture along with a complimentary splash of vibrant green colour to the dinner plate. This would be a unique and attractive side dish to any holiday meal or any meal for that matter. The addition of heavy cream (aka whipping/35% cream) makes for the unexpected; A rich and balanced, smooth, just right sauce. I am always grateful when a recipe's directions are easy to understand and follow, producing results exactly as promised. High marks for this one Pugged.
