Soft Christmas Cookies

Cookie cutters and I were not friends until I found this recipe! Tonight my family and I were finally able to enjoy sugar cookies that actually looked like the pumpkins, moons, & ghosts that they were meant to be! I did follow other reviewers advice and baked at 350 F for 8-10 minutes and rolled the dough out thick. I started to use only 3 overflowing cups of flour, but chickened out and added another 1/4 cup. Will definitely be my "go to" sugar cookie cut-out recipe.

French Toast I

Made this out of some Italian bread that had been in the pantry a couple of days past its prime. It was my first time making french toast. I didn't try it but my husband thought it was good, not great. Used all cinnamon rather than combined with nutmeg. I'll keep looking for my ideal french toast recipe.

Waffles II

These were really good. My husband made these for breakfast this morning. He added 1 tsp of vanilla and used white whole wheat flour for part of the flour- which made them very filling. He also let them sit while he went to the store to buy syrup. I think he was really craving whole wheat waffles.

Mama D's Italian Bread

The taste, texture, & crust of this bread is outstanding. My family loved it! However, the directions were not as great. I just made the bread how I usually make bread and it turned out nice. I sprayed some water onto the loafs before putting in the oven and again within the first few moments of baking. I did have a spreading problem during the last rise. The "footballs" looked rather deflated. I think that the liberal use of olive oil on the pan contributed to this because the loaf on the unoiled baking stone didn't have this problem. After baking it didn't really matter though and the bread was great- one to eat with dinner, one to share, and one to freeze for another day!

Vanilla Ice Cream IV

My husband made this for a family reunion and it was hit! He used egg beaters because they are pasteurized. Mixed brownies into one batch and mango into another. Everyone loved it and my husband has decided that he needs to purchase an ice cream maker (the one we used was borrowed).

Country White Bread

One of the best breads I've tried! Made into 2 round loaves and didn't have time to do the full 2 hours of rising, but they turned out perfect. I used all of the sugar and didn't find it too sweet at all. Also used bread flour (about 3 1/2 cups) and whole wheat flour (about 2 1/2 cups) in place of all purpose. The bread also did not require the entire 25 minutes of cooking. I unexpectedly had my mother-in-law, mom, dad, & grandmother drop by tonight and everyone loved it and had at least seconds. Will be my go to bread from now on.

Chocolate Peanut Butter Bars II

Very tasty and rather messy eating! Halved recipe and put in 8x8 dish. Added 1/4 cup graham cracker crumbs as suggested by another reviewer. Delicious! Will be making again.

This was a great recipe that helped use up the huge zucchini my 4-yr old discovered hidden in the garden! Did not use red wine but did slosh in some red wine vinegar. A great vegetarian minestrone- even my soup-hating husband enjoyed it and took leftovers to work!

Spinach Tomato Tortellini

This was good but needed more flavor. Used mushroom ravioli, fresh basil, frozen spinach (from a bag, not a box- its more fresh-like), and a can of evaporated milk in place of the milk & cream. It was a very quick, easy dinner with ingredients that are always on hand in our house. I'll probably make it again, but play around with adding more flavor.

Brilliant Sauteed Broccoli

Yummy! I've never made ribs before, but saw them on sale and gave it a try. The work wasn't all that bad. Besides adding a touch of liquid smoke, followed the recipe exactly and got great results! Will make again when they go on sale.

Playgroup Granola Bars

I've never been a granola bar fan, but these may just change my mind. I used the optional raisins, and eliminated the wheat germ as I didn't have any. Also used whole wheat flour. They turned out very chewy, which we loved. Next time I will sub whole wheat flour for the wheat germ (or get to the store to buy some) to see how it turns out. The husband has requested trying dried blueberries, which I'll do tonight. Quick, easy, and way better than the $2.50 for an 8 count variety. Definitely a keeper.

Unbaked Chocolate Oatmeal Cookies

Just made these, still licking the spoon. Not set yet, but they taste fantastic! Used vanilla soy milk for the milk, substituted 1 cup brown sugar for the 2 cups of white sugar as suggested by other reviewers. After milk mixture was finished boiling I added the other ingredients to the pot to keep from dirtying another bowl. A true one pan wonder!

Asparagus Parmesan

Really great springtime recipe... with a couple of changes. I added the appropriate amount of butter but held back a little on the olive oil. My asparagus had plenty enough oil, I can't imagine how swimming in oil would have improved the dish. 3/4 cup of Parmesan cheese is way too much. I put between 1/4-1/3 cup and was happy with the results. Also added minced garlic as advised by other reviewers. With the variations it was very tasty and will be my "asparagus" recipe.

Beaker's Vegetable Barley Soup

A really great vegetable barley soup recipe. I enjoyed the kick from the different seasonings. I cooked the veggies plus a little minced garlic in olive oil before adding the broth and only used 1/2 cup of barley. I wanted a soup-like consistency and I got it. Great tasting vegetarian source of protein. Will make again.

Soft Garlic Breadsticks

These were really good and would be very close to Olive Garden breadsticks with a couple of adjustments. I made these by hand but tried to follow the recipe as closely as possible. Next time I will do the following differently: 1. reduce the amount of basil and/or use dried 2. Make less breadsticks, making them thicker 3. Try letting the dough rise for about 30 minutes before making them into breadsticks. I did indulge and use 2 Tbsp of butter to finish them off, but probably would have been fine with 1 Tbsp.

Black Bean Spinach Pizza

Spicy! It could have been the homemade chili powder I concoted or the liberal dose of hot pepper sauce, but this pizza was anything but bland. What really suprised me is that my husband actually really liked this dish a lot (he usually just tolerates my meatless meal attempts). I added fresh baby bella mushrooms as advised by other reviewers, but I couldn't really tell they were there. Also used fresh spinach as opposed to frozen. Although I have not tried the frozen, I can't imagine that it would turn out as well as the fresh did. I used homemade pizza dough as the base. I prebaked it right before adding the black bean mixture. I think the heat from the crust really helped with spreading the beans. Overall a great, healthy recipe which I will make again (using a lighter hand with the hot pepper sauce)!
