Oven-Fried Pork Chops

Reviewed: Dec. 5, 2011
Made as listed,, will make again with the following changes: omit the milk, turn oven temp down to 400 degrees as 425 caused the coating to burn, add seasonings such as salt, pepper and herbs.

Just made these tonight and oh my goodness, so fluffy and yummy! Only change was I used agave instead of brown sugar. Will definitely make these again!

Crispy Fried Chicken

Reviewed: Nov. 6, 2011
Chicken was crispy and moist but there was little flavor in the crust. Salt and pepper to taste is difficult because you can't taste until it's cooked then it's too late. Paprika isn't much for flavor either. I'll be looking for a recipe with more seasoning/herbs for next time.

Ron's Bread Machine White

Reviewed: Nov. 6, 2011
This is the second time I've made this and it seems consistently good. Has a soft texture with small crumb and tender crust. My husband loves it so I will continue to make it.

Surprise Banana Cake

Reviewed: Oct. 31, 2011
This was really dense and heavy and turned out more like bars or a flat banana bread than a cake, despite following the recipe. Will not make again.

Perfect Sushi Rice

Reviewed: Sep. 8, 2011
I have tried this recipe five times now and my rice turns out starchy and smeary every time despite rinsing the rice until water is clear/following all directions. I have investigated other sushi rice recipes on the internet and it seems the cooking time is too long with this recipe. In the other recipes there is no oil. I will not make this one again and would not recommend it.

Fruit Pizza I

Reviewed: Jun. 21, 2011
I made this instead of the trans fat filled version of the sugar cookies in a tube, fruit pizza recipe. Made a double batch of the cookies (but cut out some of the sugar) for two pizzas in my Kitchen Aid stand mixer; it was easy and they turned out great. Just make sure to put some vanilla extract in the dough, tastes much better that way. Much easier to pat this out than the refrigerated dough too. Baked until it was toasty brown and crunchy when cool. The next day what little was left was not soggy at all, btw. I also drizzled over the top a glaze of orange marmalade and juice from the canned mandarin oranges I used. I doubled the cream cheese topping for the two pizzas; I used a small container of marscapone cheese along with the regular cream cheese. I could have eaten that mixture with a spoon! I took this to my in-laws for Father's day dinner and everyone raved about it and had second helpings.

White Cheese Chicken Lasagna

Reviewed: Jun. 12, 2011
Great recipe though time consuming but a few things I did to make it better: The sauce was really thick although I followed the recipe exactly, it didn't want to spread. I added additional stock to thin it out and it was perfect when done, not dry at all and held together well. You definitely need more than nine lasagna noodles, which is the reason I gave it only four stars. In order to fill the 9x13 pan, using 3 per layer there were gaps between the noodles. I ended up using 12 noodles which was inconvenient because I had only cooked nine. I used about three cups of chicken as two weren't enough for that big of a pan. I used fresh spinach instead of the frozen. I mixed the ricotta with an egg, parsley and parmesan which is how I do it for regular lasagna.

Fluffy Biscuits

Excellent recipe if you like light and airy biscuits. Easy to make in food processor. I used butter instead because vegetable shortening has transfat.

Roasted Brussels Sprouts

Reviewed: Mar. 23, 2011
I'm a brussels sprouts fan but sometimes don't like how strong they can be. The roasting process seems to take that strong taste away. My favorite part are the outer leaves that get really brown and crunchy. I also like to add fresh chopped rosemary before roasting.

Green Onion-Parmesan Mornay Sauce

This is a pretty good recipe that I make with homemade chicken cordon bleu. I omit the green onions and also give it a good sized splash of dry white wine because we like the depth of flavor it adds.

Buffalo Chicken Dip

Reviewed: Mar. 23, 2011
Tastes very much like buffalo chicken. I'm not big on the canned chicken though, it almost dissolves into the mixture. Next time I'll cook and chop my own chicken breasts instead.
