Coconut Shrimp I

These were excellent and forgiving as I made them about an hour ahead and kept them in a 250 degrees oven. Very easy though I did smell the house up with the grease!

Chicken Enchiladas I

Excellent. Substituted canned green chilis for the pepper and enchilada sauce instead of the taco sauce. Only thing I would suggest is making sure the onion is cooked thoroughly before adding to the mix-it tasted a little raw. Otherwise, great!

Berry Shortbread Dreams

I've made these for years. I've had 2 adjustments. I don't add almond to the glaze as it's a little overkill and I use jam with seeds. Make sure the water in the glaze isn't too cold or it seizes.

Without a doubt this is excellent but I'm more impressed with the sauce. Lasagna is fairly similar between recipes but the sauce is outstanding!

Best Big, Fat, Chewy Chocolate Chip Cookie

These were amazing! I: -made them as written (with butter, no chilling) -loved them fresh from the oven -didn't like them as much next day (sort of chewy) -froze a bunch to eat from freezer (crispier)-really great (would make amazing ice cream sandwiches).

Mom's Zucchini Bread

Excellent flavor and very moist. It's a great accompaniment to a summer meal. It is very cake-like so it could serve as a dessert or coffeecake. I omitted the nuts but may add coconut next time for texture.

Blueberry Buckle

This is a no-fail recipe! I now prefer the muffins instead of a cake and bake them for about 22 minutes or so. The flavor is wonderful and it's a very easy recipe to make.
