Little Mickey's Favorite Cheesecake

This was amazing. My SIL's request this every year. I skip the peanuts and use a straight graham cracker crust. Place a few chocolate chips on top of the crust before pouring in the batter and skip the chocolate chips in the batter (I like the filling to be smooth), use a full cup of pb and then top with Chocolate Ganache Icing from this site. It's like a giant Peanut Butter Cup!

These are really good with a dollop of whipped cream. But, we did not have good luck reheating the leftovers. We topped a few with toasted pecans and that was good, too!

Bavarian Mint Fudge

This isn't real fudge....I call it cheater fudge. It's so good! Just be sure not to over cook the chocolate when you are melting it. Even if you did it in a double boiler, that would work fine! I used an 11x17 pan and the fudge was thin, but will probably use a bit smaller of a pan next time. Also, I pressed some crushed candy canes into the top before cooling and that was nice, too!

Jesse and Steve's Fresh Strawberry Cake

SUPER YUMMY! I sifted the flour, used brown sugar instead of turbinado, 2 cups slightly sweetened strawberry puree instead of the mashed (since all I had was frozen berries), and used strawberry yogurt in place of the sour cream. The strawberry flavor was subtle and the lemon flavor was wonderful. Needed to bake a bit longer due to the extra liquid, but was wonderfully moist. Could have doubled the glaze and made it a bit thicker, but it tasted divine. I'll make this again! Thanks!

Best Chocolate Chip Cookies

If it's even possible, I found a way to make these even better!! I ran out of flour, so I used 2 cups all purpose and 1 cup of ground oatmeal (Put it in the blender until ground fine like flour). The result was amazing.

Taco Seasoning I

Really yummy! I think it's better than the store bought stuff. I didn't add the red pepper flakes because I had 2 little boys eating it, but did add a small shake of cayenne pepper. Thanks so much! One batch was perfect for 1 pound of hamburger.

Apple Strudel Muffins

These are AWESOME MUFFINS!! I made a double batch and it made oodles of muffins! I grated half the apples and chopped the other half (total of 4 cups for a double batch), added about 2 tsp cinnamon to the batter, added 1/4 cup milk, added a full tablespoon vanilla, and used melted butter. It was a big hit with my family and my son's kindergarten class!

Slow Cooker Stuffing

I made this for our Thanksgiving celebration last year and it was AWESOME! I've never made a turkey, let alone stuffing before and this was a big hit. Mixed it up the night before and put on in the morning for noon lunch...was ready after 4 hours on low. Didn't use as much broth. A definate keeper! Thanks!
