About this Cook
Married with twin daughters. Work in a bakery. I love my job!
My favorite things to cook
My scallop potatoes and my Mom's meatloaf recipe.
My favorite family cooking traditions
I loved baking with my Mom when I was a kid. It is a memory I cherish dearly as she passed away 20 years ago. To keep the tradition, I LOVE baking with my daughters! Its a fun time to be creative and keeps us close and of course create memories for my daughters.
My cooking triumphs
Cooking the turkey to perfection (no dried out meat) for any family gathering is my greatest triumph!!
My cooking tragedies
My first turkey, I left the giblets and the neck (which was enclosed in plastic)inside the turkey. I realized halfway through cooking it, when my Uncle wondered where the giblets were. He teased me for years after that!

Lemon Meringue Pie III
This is a REALLY delicious pie!! I only thing I had trouble with is when I mixed the cornstarch mixture into the sugar mixture, I had all these cornstarch balls which I never took out...ooops! So when I ate the pie I had all these jelly like balls..kind of gross but it did taste wonderful! I probably should of SLOWLY poured the mixture little by little, mixing it well before the next addition...oh well, I'll try that next time!

Carrot Cake with PHILLY Cream Cheese Icing
It was very good...the lemon cream cheese icing was different compared to other carrot cakes. I took it to a family reunion and everyone loved it...there was none left to take home!

Easy Ice Cream Cake
This ice cream was such a hit and SO easy to make!! I love the idea of using ice sandwiches as a base and all the options you can create. Instead of using Cool Whip, which I am not a real fan of, I used name brand ice cream, let it melt for a few minutes and using my hand mixer, I blended in a Butterfinger chocolate bar into the semi-melted ice cream. I used this as my layer between the ice cream sandwiches and on top. I also used a loaf pan and lined it with plastic wrap for easy removal of the cake. Once the ice cream cake was semi-hardened, I drizzled melted chocolate on the top. My kids loved it and my husband said it was better than Baskin Robbins! This recipe is a keeper!! Thank you for sharing it with us all!!
