Pineapple Pizzas

Easy, different, and so good! The pineapple/sausage mixture is just the right combination of sweet and salty. I did think the tomato paste dominated a bit too much, so just spread a little of that on your pizzas.

Yellow Squash Patties

I don't understand the part about draining the squash. Putting salt on it is supposed to extract water? Nothing drained from mine. We ate these with Ranch dressing, and the dressing was all you could taste. This recipe is going to make a LOT of patties unless you the number of servings.

Green Tea Layer Cake

Delicious! This cake got gobbled up quick. Like other people have said, the amount of icing this recipe produces is not enough for the cake. Go ahead and multiply the icing ingrediants by one and a half, or two. And I would not recommend making this using regular green tea. Find the green tea powder/matcha/maccha at an Asian foods store. It is so fine, it looks nothing like regular green tea.

Since so many people said it was watery, I used one can of chicken broth and one can of cream of chicken soup instead of two cans of chicken broth. That worked fine.

Eggplant Mexicano

I fried them, and I didn't realize how much oil eggplant can soak up, so I ended up with very soppy eggplant which wasn't very appetizing. If you want to try this, follow the directions and grill them. Or else limit the oil you use when frying.

Raisin Sour Cream Bars

These are pretty good. Would be just fine served as a dessert. The baking dish I used was smaller than 9"x13". I think 9"x13" is too big; the layers would be so thin. As far as the cooking time, 20 minutes was enough for me because I didn't eat any right away. After chilling it in the fridge, it was sturdy enough.
