Jamie's Cranberry Spinach Salad
A very versatile salad mix and worthy of the ratings. I did use the Paul Newmans Light Balsamic Dressing as I was rushing but will try the dressing as written for the next round.

World's Best Lasagna
Oh YEAH!! Wish could give bonus stars!! My hubby declared it the 'Best comfort food'! I was short on time and used 400gms lean beef mince plus 4 italian meatballs for the meat. I cheated and used a jar of spaghetti sauce and big splash of red wine. Not sure if you are supposed to but I pureed mince with stick blender. The ricotta mix was fantastic (I hate making cheese sauce for lasagna). I assembled and placed in the fridge for a day so I could pop in the oven the next night. What a massive success! Can't wait to make this again on the weekend!

Tantalizingly Tangy Meatloaf
Yummo!! I made a couple of changes in that I added fine chopped onion and bacon to the meat. I couldn't get the pineapple preserves so did what others had suggested and used apricot jam and couple tbspn of crushed pineapple. This is the first meatloaf I have made that my whole family enjoyed. I will probably make this every week now!!
