Creamy Au Gratin Potatoes

Exceptionally easy and tasty Au Gratin Pototoes recipe! I will never buy the box mix again. This is wholesome ingredients and so simple to make. The only change that I made was using minced onion because I don't like onion chunks. A great side dish.

Delicious Raspberry Oatmeal Cookie Bars

Very good raspberry cookie bar recipe! I added a small amount of applesauce to the recipe to make sure they wouldn't get dry, and baked them in a glass 13x9 pan (doubled recipe). They turned out great! I will make again.

The Whole Jar of Peanut Butter Cookies

Soft, yummy PB cookies! Easy to make. I used half unsalted butter and the other half salted. I made these with no nuts and they are still very good.

Coconut Macaroons III

This is an excellent, easy recipe. I love macaroons and this is one of the best I've tried. It was my first time making macarooons and these turned out perfectly. It helps to chill the dough for a short time, but I like to not have perfectly rounded macaroons so that the coconut toasts more during baking. Friends loved these! I made some dipped in semi-sweet chocolate.

Chicken Enchiladas II

I substituted cream of chicken instead of using the mushroom soup and it turned out perfectly! (Although I think the mushroom soup would have tasted good as well) These are fairly mild which is what my husband and I both like, but you could add some heat by adding hotter chiles or jalepenos. I also made these in the crockpot which was an easy premade dinner, along with some spanish rice and salad and it was a great meal!

It's Chili by George!!

This chili was okay, not great. The chili powder overwhelmed the entire chili and didn't add much "depth" to the flavor. I cooked it in the slow cooker and it wasn't any better the next day. It seemed to lack a balance of spices. Maybe incorporating garlic? I'm not sure. Just okay, would not make again.

Cold Szechuan Noodles and Shredded Vegetables

Did not care for this and will probably throw most of it away. I made it for my husband and I last night, followed the recipe exactly with all of the correct ingredients. I was also looking for a tasty cold Chinese noodle salad, this wasn't it for us. Didn't care for the sauce.

Alaska Salmon Bake with Pecan Crunch Coating

I've made this dish twice now and it has turned out great both times. Our family and friends love it and it is an easy recipe to follow. The pecans on top of the honey dijon coating adds just the right flavor to salmon. One of the best recipes I have!
