Strawberry Oat Muffins
Wonderful recipe! I added a 1/4C applesauce for half the oil, used egg whites only and whole wheat flour and finally added 1/4 to 1/2 tsp cinnamon. In one batch I added a bit more than a cup of freshly cut strawberries and in the other blueberries. Both came out wonderfully flavorful. These are yummy and super healthy and pass wonderfully for comfort food so my family loves them! If you are looking for something healthy AND tasty then this is it but if you want a more pastry-like fluffy muffin to indulge your sweet tooth, then you might not like these. A useful hint is not to use the really juicy strawberries because they will turn to mush and make the muffins too wet.

Quinoa and Black Beans
So yummy and wonderful texture! I might reduce the cilantro a bit (boyfriend is not a fan of it generally) and I might increase the cumin a tad next time I make it but even as is, it's so so good. I used only one 19 oz can of black beans and I felt it was enough and I used red quinoa which tastes the same as the normal kind but looks pretty in case you feel like a change.

Zucchini 'Noodles'
Yummy idea! It got me looking up all kinds of zucchini pasta ideas and recipes. I omitted the last step, just drained it well and served it with marinara sauce. It was fantastic.(Marinara sauce: sautéed onions with barest spray of oil, then added a can of whole tomatoes to the pan, a lot of basil, a bit of oregano, salt and pepper to taste and a couple tbsp of splenda, simmered till it was thick in consistency) For cheese, my bf used some parmesan and I used some low fat mozzarella. Very yummy, very low calorie!
