Shrimp Verde
This had a nice, clean flavor and is an easy week-night meal. I added 1/2 tsp of red pepper flakes and next time might trade feta for the pamesan.

Sassy Chicken Enchilada Dip
Rave reviews at work pot luck! I used 2 (9.5oz) cans of chicken breast meat, drained, a couple of tablespoons of chopped cilantro. I also added a 7oz can of whole green chilis, drained and chopped. I let it chill overnight - it definitely needs some time to let the flavors meld together.

A Nice Slow-Cooked Pork
Excellent and easy pork roast. Like others, I used frozen pearl onions, halved the broth, added baby carrots, and cooked the potatoes separately b/c there wasn't enough room in the pot.
