Texas Caviar with Avocado
Quick and easy and perfect for a potluck. I made everything but the avocados the night before my office potluck and then added them in the morning. It was great because it gave me a little extra time to ripen the avocados.

Baked Pesto Chicken
This was super easy and very tasty. I knew it would be good when I could smell it baking in the oven. I used more pesto than recomended. I also served the chicken atop a cappellini mixed with pesto. I used canned plum tomatoes which mixed in perfectly with the pasta.

Fiesta Pinwheels
So easy to make for lots of people with ingredients that most people just have around. It is definately an easy party hit. I made them the night before I served them in wheat tortillas and used light sour cream and light cream cheese which did not detract from the taste.
