Broccoli and Ramen Noodle Salad

Reviewed: Dec. 25, 2007
We made this last night for Christmas guests. Everyone who tasted it loved it. I did not have or use peanuts, used pecans instead (which I like), and used sesame ginger dressing instead of olive oil. I can guarantee that we will be making this again soon...healthy and tasty! thanks!OH, and to add more for the kiddos, I suggest added some craisens or raisens... :)

This was great...great...great...used it on our santa cake, but I suggest upping the powdered sugar a tad to thicken for decorating :). Thanks for sharing.

Parmesan Orange Roughy

Reviewed: Dec. 5, 2007
I thought this was very simple, and very good...but I added some cajun seasoning to the cheese and crumb mixture to give it some zing, and a little yellow mustard and a bit of salt to the egg/milk mixture. I used white fish, lemon fish for this since that is what i had on hand...I suggest broiling the fist for the last 3 minutes or so, to nicely brown the top.

How someone can find fault with this recipe, I don't know...I thought it was fantastic. I browned the beef and then added it with all the other ingredients to the slowcooker, with a setting of 3 hours. IT was really very good. Thanx.

Well, I really liked the change and I will be making his over the holidays, and in between. I have twin toddlers, and they liked it too~ good, healthy salad for them :)>

Pasta Lasagna

Reviewed: Sep. 6, 2007
This was a good recipe~ was looking for a "lasagna" recipe, but wanted to use penne pasta instead, since it is what I had on hand. These are the additions and changes that I made (only to suit our taste on experience/ not because of any possible flawsn seen in your recipe). I added 2 tablespoons of the zesty dry italian seasoning to the meat, as well as fresh sliced mushrooms, while it browned.... and then fresh sliced zucchini. I mixed some of the pasta sauce with the noodles (3/4 lb) of penne, laid it at bottom of baking pan. I then spread the ricotta mixture on top of that, put remaining meat sauce as next layer, and lastly the mozzarella with a few shakes of parmesean .

Cucumber Avocado Salad

Reviewed: Sep. 3, 2007
This was great! First time I use avacados other than in quacamole salad, or garnish. Nice sweet/tangy flavor. I didn't have red wine vinegar, so I used an italian vinagarette, and used 2 full teaspoons of dill weed in place of fresh dill.

White Bean Chicken Chili

Reviewed: Sep. 3, 2007
I thought that this was a good recipe~like the flavor comes from the spices and not fat (healthy ;) ) It was easy to make. for sure. I was surprised, though, thought that it would have been a bit more tasty, from the reviews that I have read. Mine came out to be more of a soup. I didn't have the tomatillos?(substitued more diced tomatoes) and wonder if that would have made it even better...??? I added two chicken boullion cubes and 1/4 cup of worstershire sauce....Will be making this again.

this recipe recieves 5 stars from my family. It was very good :) Here are some modifications I made to suit our tastes: I added 2 fresh chopped zucinnis to the sauce, and cooked it until barely soft. I used lowfat cream cheese and sour cream, and added a jar of sliced mushrooms. And lastly, we used Wisconsin Beer Cheddar :)..Husband ate thirds of this!!!

Slow Cooker Chicken and Dumplings

Reviewed: Aug. 22, 2007
This recipe was very good and soooooooooo very easy! I did make a few changes, and additions as well as followed other's advice. I didn't have 2 cans of cream of chicken, so I used one can and one can of cream of celery. I added a teaspoon of dill weed, two chicken boullion cubes, and a teaspoon of basil. My husband and toddlers ate it up. I am looking forward to cooler weather~great meal to warm you up on a cold winter day. Thanks for recipe!

Whiskey-Marinated Steak

Reviewed: Aug. 21, 2007
I am the author of this recipe, but I need reviewers (users) to know that you can combine these same ingredients (minus the steaks) and cook over low medium heat for 10 minutes. Add 1 tablesspoon cornstarch to thicken. Simmer an additional 4 minutes. Use as a sauce to dip steaks in while eating! OR~ I have never done it but it was suggested to me to boil the marinade that is left over for same purpose.

Broiled Tilapia Parmesan

Reviewed: Jul. 26, 2007
Came out perfect!~I followed other reviewer's advice and also added in some breadcrumbs, think that is what helped to keep it all together and give it just a tad crispness~yum, yum, yummy! I used light mayo, but real butter for the flavor, just cut down the amount a tad.

Grilled Sea Bass

Reviewed: Jun. 24, 2007
I prepared this to go along with white beans and rice. I doubled the ingredients of seasonings~~Did not have on onion powder, used chives (freeze dried) and added two tablespoons of Durkees Grill Creations, Citrus Grill (u can find this at Sam's club-we really like it :) We drzzled the butter, but ony used enough (melted in a mircowave) to lightly drizzle all fillets. I sprayed on a little lemon juice just before removing---did not have lemon/ pepper. It was fantastic, and was a pleasure to smell while grilling. Next time, i will prepare a shrimp pasta dish, think it would mix well together ;)

I think this is a 5 star recipe. My changes: I added a can of diceed roasted tomatoes and decreased the amount of butter, added a couple teaspoons of CAjun seasoning. I served it with linguine beside a seared salmon filet...very good :)

Hamburger Goulash

Reviewed: Mar. 19, 2007
Was looking for something that was quick and that I could use ground beef and potatoes with, found this recipe, followed some of the others' advice and made a few changes of my own. It was good, but not one of my favorites... sorry ;( Changes: I did not add noodles, used 5 potatoes instead of 4; two cans of green beans (14.5 oz); one can of cream corn and one can of sweet yellow corn, and a small can of lima beans, more salt and pepper. This was a good recipe to serve the family, meaning kids, so they can get their nutrients, vegetables etc... but not anything enticing for company or guests.....I would cook this again, however, when running out of time and need a hot cooked meal, pronto!

The Best Meatballs You'll Ever Have

Reviewed: Mar. 4, 2007
I had to substitute extra bread crumbs for croutons, and used cayenne pepper. I also, because I just have always liked the flavor it adds to meatballs, added 2 tbs of brown sugar (adds some sweetness to the spice) It was added to our spaghetti sauce, and it was an H E double hockey sticks of a meal! Thanks for the recipe!

Shredded French Dip

Reviewed: Mar. 1, 2007
Easy, Easy, Easy...This was very good. I did as others suggested, used toasted poboy bread, mayo, and provolone, with lettuce and tomato. I would suggest adding some more seasonings while it cooks and...ONLY thing I did to this recipe, those I was tempted, to do moare, was add was a little salt and pepper to the meat and gravy after beef was shredded and returned to the cooker. Thanks :)
