I'm a mom to three boys- Zach, Colby and Nolan. And married to Will. We moved to Texas in 2003 and right now we are living overseas in Angola, Africa. I enjoy cooking, reading, painting, hanging out with friends and spending time with my family.
My favorite things to cook
My favorite things to cook are baked goodies. Everybody appreciates desserts more than anything else! I also enjoying cooking Mexican food and trying all kinds of new recipes.
My favorite family cooking traditions
My favorite family cooking traditions are making Christmas cookies with my Mom and grilling during swimming season in the summers growing up.
My cooking triumphs
It has been interesting adjusting my recipes to use ingredients that can be found here in Africa. I've learned to make a lot of new things just out of necessity! I use Allrecipes.com all the time to come up with ideas for new meals with the random ingredients I have leftover and don't want to waste!
My cooking tragedies
Before I got married I did not know how to cook at ALL! I tried to make dinner for my soon-to-be husband and I burnt the grilled cheese and ruined the canned tomato soup because I forgot to add the milk! It was awful!

Cafeteria Carrot Souffle
Definitely a 5 star!!! Took this to a BBQ and it was a huge hit. I read through almost all the reviews before I made it and changed these thing per popular opinion by other reviewers: used 1/4 cup white sugar + 1/4 cup brown sugar no powdered sugar 1/4 tsp. cinnamon + 1/4 teaspoon nutmeg pinch of salt baked for 45 minutes. SO good!!! And a great way to use up lots of extra carrots! Note: 2 pounds of carrots is equal to approximately 12-16 medium carrots OR 7 cups of peeled and diced carrots

Baked French Fries II
These are great! I cut the potatoes with a mandolin on the french fry setting, which made it fast and easy, but I think they came out too thin. The taste is awesome! I did have trouble with them slightly sticking, so I think next time I'll place them on parchment paper. Great recipe!!

Potato Chips
Holy Smokes! Like so many of the other reviewers on here, I was a bit skeptical but WOW-EEE these are good! My kids LOVE them! They like them best with Tony Chachere's Cajun seasoning lightly sprinkled on top. I had trouble with the first two batches sticking to the plate. I ended up coat the plate with olive oil and then sprinkling the tops with salt (or cajun seasoning), with no additional oil on top. Yummy! But they are quite time consuming! If you're hesitant about trying it...just try it once with one potato (I HIGHLY recommend slicing the potatoes with a mandolin- nice and thin and uniform in size). Have fun!
