Poblano Chile Enchiladas a la Gringa

Very nice recipe. I give it four stars because I didn't think the flavor was popping out. I fire roasted my pabalno's over the gas flame on my stove top, put them in a paper bag for a few minutes and peeled the skin off with paper towels, removed the seeds for wonderful tasting pablanos.

Chicken Chimichangas with Green Sauce

Great recipe..although I did make several changes..I used canned green sauce with added chopped green chilies, onion and some of the shredded chicken..that was all for the sauce. I love baking the olive oil brushed chimies in the oven..the best! My husband ate them like no tomorrow.

Best Ever Blueberry Cobbler

This was way to sweet for me. Also I did not care for the cobbler topping. Sorry, this was just not my idea of the kind of cobbler I like...on the other hand my husband liked it very much!

Coconut-Cream Cheese Frosting

This is an excellent recipe...everyone loved this cake and frosting...The only thing I changed was to put the coconut only on top of the frosting untoasted. I used milk instead of cream and no salt. I also spread the frosting on the center of the cake and spread a thin layer of my homemade strawberry jam on top of the frosting.

Microwave Lemon Curd

This was very good and easy to make. I gave it four stars because I changed the recipe as another suggested. I also left out the zest. I prefer a smooth curd. My lemons were very tangy so next time I will add less lemon juice and a little water.

Marinated Grilled Shrimp

I made a few changes to add more flavor!I used tomato paste and a little water to make a thicker marinade that would cling to the shrimp for better grilled flavor. I also added a little sugar so the sauce would carmelize on the shrimp as it grilled. I soaked wooden skewers in water for 30 min. so they would not burn on the grill. The shrimp turned out very nice flavored and we enjoyed them very much.

Kielbasa with Peppers and Potatoes

Good recipe..I changed just a few things. For veggies I added onions and sliced cabbage, dash of red pepper flakes a little more Olive Oil. I added in this order to my large iron fry pan. Oil, potatoes and browned a little on both sides then added Kielbasa or Smoked Sausage sliced at a long angle for browning then added all other ingredients...cooked everything till meat and potatoes had a nice browned top and bottom...gently turning with heat turned down till all was tender.

All Day Apple Butter

This is a very easy recipe to make. I made a few adjustments to my own tastes as suggested by others. Less sugar and less spice. I also filled the crock pot with apples to make a larger batch. Using my little salad oil battery operated whirler really helped turn the apples to a smooth sauce quickly and easily.

Green Tomato Relish

Great tasting recipe...love this recipe to put to use all my green tomatoes..I would like to try and make this with larger slices of tomatoes, onions, and jalapeno peppers and no spices...so it will taste like a favorite catfish resturants relish that I just love.

Red Snapper Livornese

My husband will not eat capers...so with some slight changes he enjoyed this dish made for two and cleaned his plate. Im not a big fan of red snapper and would enjoy this dish with another type of firm flesh fish.

Apple Pie by Grandma Ople

Love this pie. I always cook my apples a little first to keep them from shrinking in the pie. I liked the glaze best poured over the apples and then some topped on top of the crust. Equally good with any shaped crust topping. Vanilla and cinnamon in this recipe is always good. Thank you, Grandma Ople.

Eggplant Parmesan II

I cut this recipe down using one eggplant. This made enough for 2 with the baked chicken for the main coarse. I thought it was pretty good and my husband liked it. I used my good homemade marinara sauce and next time will cover with foil while baking as we like our cheese unbrowned and well melted on the topping...easy way to make eggplant.
