Butternut Squash Soup

This was my first time cooking with butternut squash. I was afraid that after all that work making it that I would not like it. I loved it! I used butter, one block neufchatel, 4 cups broth and added some salt.

Grandmother's Buttermilk Cornbread

I baked this bread for the first time over a year ago. My family loves it! I finally tried making muffins with the recipe. I got 12 muffins and 11 mini muffins. They don't rise very much so you can fill the cups to the top. Of course, they were done faster than the bread.

Bodacious Broccoli Salad

I doubled the broccoli and mayo. I used one packet of stevia instead of sugar. I put in 1/3 cup cider vinegar instead of the red wine vinegar. I omitted the lemon juice. We loved it!

Cheesy Ham and Hash Brown Casserole

I used 3 cups of creamy potato leek soup. I added some salt, pepper and creole seasoning. Next time I will try 1 cup of sour cream like some others have suggested. I also omitted the grated cheese. I am glad we'll have some leftovers to enjoy tomorrow!

No-Sugar-Added Blueberry and Banana Wheat Muffins

Unfortunately, I did not have enough ingredients so I changed the recipe a little. I used 1/2 cup banana, 1/4 cup unsweetened applesauce, and 1/4 cup grapeseed oil for the banana part of the recipe. I substituted 1/2 cup unsweetened applesauce for the oil. I will try using 1 1/4 cup wild blueberries next time. They are very good warm. The consistence was good. I made 12 and baked them for 28 minutes.

Banana Oatmeal Cookies II

I doubled the recipe and used 1 cup of butter, 5 bananas (about 2 cups mashed). I used 2 1/4 cups of white whole wheat flour. I used about 2 cups chocolate chips instead of walnuts. Awesome!

Banana Blueberry Muffins

I changed the brown sugar to 1/2 cup sugar. I used 2 whites. I added 3/4 cup skim milk, 1 tablespoon oil, 2 tablespoons natural applesauce, and a little salt. I had 3/4 cup banana and 1 1/4 cup blueberries. I baked them at 400 degrees for 18 minutes. Next time I will try all applesauce and use splenda for half of the sugar. My husband, 2yr old, and I really liked them. My husband said they taste more like a quick bread than a muffin, but still very good.
