Homesteader Cornbread
I was looking for a recipe for cornbread that wasnt TOO sweet. If I wanted to make cake.... I would =) I dont want to. I want to make cornmeal,haha. This recipe was great. I switched the quantities for flour and cornmeal and let the cornmeal and milk set for 10 min. per others suggestions. I also made the recipe to be 1 1/2 times and then had more then enough to fit in a 9 x 13 pan. This made it possible to reduce the temperature to 375 and produce really thick cornbread slices like they have at Marie Calendars! I loved it!

Dairy Free Whole Wheat Pancakes
I love this recipe. I add 1 t. of almond extract as well. I think it really highlights the whole wheat flavor. In place of the 1/4 wheat germ I have always used uncle sam's brand cereal you can buy in the healthy section of Walmart. It gives the pancakes a bit of a crunch from the flaxseed. Couldnt say more wonderful things about this recipe. Thank you!

Terry's Texas Pinto Beans
I used homemade red salsa I had and did not add the jalapeno or pepper. I prefer really spicy foods and would have liked to try the recipe the way it was intended but my husband wouldnt like me anymore. The beans had a very "healthy" taste to them and just enough kick to make them stand out from just a plain "old fashioned" recipe. The soup part of the recipe was very yummy!
