Icelandic Christmas Cake
This is VERY tasty! I made it for my son's country report and snuck a piece before school. I used ground cardamom (1 tsp) as well and added it to the dry ingredients. The slight taste of lemon suits it very well. The texture is so moist, though very crumbly to cut. A good sharp bread knife would work best I think.

Jenny's Jambalaya
This is a great, easy recipe! I didn't have the precooked meat, so I cooked it with the onions at the beginning. I used Italian sausage and cut my chicken breasts in small chunks. (Only b/c I was too lazy to shred). The amount of heat is just right for me, but I tend to like milder flavors, so if you want to add slightly more hot sauce it will work if that's your taste. I will make this again and again, great recipe!

Fudgy Chocolate Chip Muffins
So incredibly good! I would suggest doubling the recipe because these will go fast. I wanted to freeze half, but everyone ate them before I could. I used half the cinnamon, though I think the full amount would be great as well. I used chunky applesauce. Very chocolately- enough for a dessert, but great for a breakfast treat. I'll be making these forever!
