Pan-fried Polenta with Corn, Kale and Goat Cheese
Loved it! For those too lazy to follow these long winded directions, you can buy dried polenta and it cooks in about 10 mins not 30. Resting in the fridge over-night might also be a useful thing to do in advance just to save time.

Stuffed Peppers My Way
Very good and simple. We added some shredded cheese on top. We also made it with quinoa instead of rice. Next time I will add a bit more spice and maybe other veggies. Still, this was a very yummy one.

Chicken Jambalaya I
Seth enjoyed. Liz did not. It did need more kick. Either hot sauce or red pepper flakes.
