Grandpa's Peanut Butter Fudge

This fudge is absolutely phenomenal. I was skeptical that the syrup mixture wouldn't cream up, but I put it in my Kitchen Aid along with the peanut butter and butter (the only substitute I used) and vanilla - it was great, I didn't time how long I had it beating but it was at least 6 minutes and then I poured it into a 9x13 pan. I can't stop eating it, in fact I need to make more because it's part of the goodie trays for the holidays.

Chocolate Pecan Pie I

This is SOOOOO good. I kind of disobeyed the directions and I layered the chocolate and then pecans instead of stirring it all together. I put the chocolate on the crust and then put tons of pecans over it (I think pecan pies never have enough pecans) and then I poured the sugar-y mixture over the top - of course I had extra sugar mixture because I added too many pecans but it was well worth it. Thanks for the delicious recipe.

Mexican Sour Cream Rice

This is so very yummy. It's the only rice that my rice-hater likes, he actually got excited about it. I add some garlic powder when I'm adding the salt and pepper, and I only have 7oz cans of green chiles. Thanks for the yummy recipe, I made it twice last week.

If I could rate these as cookie dough only I would be a 10. I'm not a cookie dough person and I loved these as the dough; the cookie part I could've done without, it was just an okay cookie for me, but it does make the yummiest cookie dough

Sweet Spicy Pumpkin Seeds

I was disappointed with this recipe, maybe it was user error. The oil and sugar separated despite having stirred it contantly to combine and not burn the sugar, so instead of pouring the separated mess over the seeds I grabbed a paper towel and soaked up the unwanted oil and poured the rest over the seeds. I think it needs salt and the chili powder is so miniscule it's not spicy at all, either the amount of chili powder needs to be increased or use cayenne pepper instead of chili powder (if I make this again I think I'd rather use cayenne). Overall it was fun to try something new.

Easy to make. The taste is just okay unless you have a great dipping sauce (I used the sauce from the blooming onion). DH thinks it'd be much better on a burger or in a sandwich. Fun to try and the kids loved them.

Peppermint Marshmallows

I only made these with vanilla (so no peppermint, at least not yet) and it's SOOOOO easy. When it says to have a hard boil make sure that the entire surface of the liquid is bubbling like crazy. I was a little apprehensive about pouring the whole hot mixture over the gelatin at once (I've only seen "stream in the syrup a little at a time..."), but it worked. Set your timer for 6 minutes and check the marshmallows in the mixture then, my marshmallows were done in 8 minutes. Let it set before you try it, otherwise it tastes like too much gelatin - trust me. Great recipe, especially since one of my boys have an egg allergy. Thanks for the great recipe.

No Bake Chocolate Oat Bars

I love these. I've made them a few different times and while it's yummy as written it's VERY buttery. I also love using rolled oats in it, I haven't tried it with instant. Now I half the amount of butter and let the butter/sugar mixture boil for 2 min before adding the vanilla and oats, it sticks together wonderfully and still tastes yummy. I also don't scrape every last bit of chocolate into the pan I save the last bit in the bowl and scrape that into a baggie so I can cut the corner and make pretty squiggles on the top of the bars, always makes it look like this 15 min dish took forever.

Spinach Salad with Poppy Seed Dressing

So extremely yummy - I didn't have any salad mix so I used all spinach (no nuts for allergy reasons), but my 5yo and 7yo ate it up. Now I just mix the dressing and keep it in the fridge and I just have it on plain spinach. Thanks for a yummy recipe Siobhan

Chocolate Fun Clay

the recipe needs to state that this is NOT clay for children to play with (unless you want a mess), it's more like fondant that can melt in your hands. you mold it into things or you can actually cover a cake with it like I did (well, I covered part of it), I've mostly seen this molded into roses, I don't know what you'd do with sprinkles unless you're making a candy mound to eat

Pizzelles III

So extremely yummy. I don't have a pizzelle iron but I do have a waffle cone baker. I made the regular vanilla recipe and turned those into waffle cones (I got 11 waffle cones from one recipe). I also make the chocolate version and used my small cookie scoop so they'd be about pizzelle size and got oodles of them, not a strong chocolate taste but DH loved making ice cream sandwiches with them.

Easy Haupia

this was very easy, I scaled the recipe down to serve 18 so I could just us a can of coconut milk. I put it in an 8x8 pan and it was very thin. Growing up I remember eating haupia like a jello jiggler so this was how I remember eating it. Next time I'll double the recipe and stick it in an 8x8 so it'd be thicker.
