Bruschetta Chicken Bake

Reviewed: Dec. 7, 2009
Ahhhmazing. My family loves this meal. It's super easy and comes out just delicious! I am a hug fan of this recipe. Although it's great without changing a thing, it can also be customized for just about any taste. When I make it for my husband I use spicy diced tomatoes and when I make it for my mom, I use less cheese, no salt and dice fresh tomatoes. Always a pleaser in my kitchen!

Spicy Hot Chicken Legs

Reviewed: Sep. 7, 2009
Although these drumsticks were nothing like "hot wings" I found this recipe to be just delicious. I used my favorite buffalo style hot sauce and halved the recipe since I didn't want to make so much of something I had never tried before. I did the legs in the crockpot for 2.5 hours then it only took about 20 minutes for them to get good and crispy in the 400 degree oven. I wonder if this recipe would work well for BBQ sauce as well? Served with rice and sauce. Yum yum.

Slow Cooker Lemon Garlic Chicken II

Reviewed: Aug. 29, 2009
This recipe was 5 stars when I made some minor adjustments and followed the advice of other reviewers. I added rosemary to the oregano rub mix because thats what we were in the mood for today. I also added chicken broth to cover while cooking and placed some mixed veggies in the bottom of the slow cooker before I put the chicken in. Sensational.

G's Flank Steak Marinade

Reviewed: Jul. 18, 2009
It is so hard to find recipes for tougher cuts of beef so I was really excited to find this marinade. I used this with an undershoulder cut and let it marinade in the fridge for 6-7 hours. We don't have a BBQ since ours recently broke so I braised the meat in the over with a mixture of marinade and added chicken broth. Cooked at 325 for 1 hour 15 minutes and it came out perfect! Tender and full of flavor. I even threw in some carrots and potatoes to braise along with the meat. I will definitely make this again. Kudos on the great marinade!

Slow-Cooked Oriental Chicken

Reviewed: Jun. 28, 2009
My fiance really loved this recipe. I actually cubed the chicken though so it didn't take quite as long to cook and it was easier to portion out. About an hour before time was up I added frozen stir fry veggies then right at the very end I added chicken broth whisked with flour to thicken and pineapple chunks. All in all, this was a good one that I'll make again!

Chicken a la Camille

Reviewed: Jun. 24, 2009
My fiance and I really enjoyed this dish. I just sprinkled the italian seasoning on rather than using so much and added salt and pepper. We used sweet bbq sauce though and I think it would have been better with a tangy one.

Weekday Pot Roast and Vegetables

Reviewed: Apr. 5, 2009
I usually do the roast in the crock pot with the cream of mushroom soup but the gravy added a great flavor to the roast and veggies. I was afraid there wouldn't be enough liquid because the gravy comes out of the can pretty thick but it thinned out as it cooked and turned out great! I hate to see food go to waste so I also threw in the last of the celery I had on hand, about a half of a can of peas and a few crushed cloves of garlic. Just with I had some mushrooms I could have added too... Mmm Mmm good!

Cowboy Jack's Beer Bread

Reviewed: Mar. 29, 2009
Not great for my first attempt at beer bread. I added salt and cut down a bit on the brown sugar but it was still a bit too sweet for my taste. Also, did not rise as much as I would have liked... I might try more baking powder next time around. And I might try half white flour half whole wheat flour next time around. Had to cut the butter a bit also, was way too much. This recipe was just ok but I think I'll look for a better one next time I have a hankering for some home baked beer bread.

Blackened Chicken

Reviewed: Mar. 19, 2009
This was pretty darn good. I doubled most of the spices, except for Cumin because it has such a strong flavor already. I also added 1/4 t of garlic powder. I used olive oil to coat the chicken then rubbed with spice mixture and cooked in heated pan sprayed with butter cooking spray. I just browned the chicken then placed in oven for 20 minutes. I let it rest for 10 minutes then served it with pasta and green beans. Delish!

Slow Cooker London Broil

Reviewed: Jan. 24, 2009
Well I had to make a few changes based on what I had on hand and I also followed some of the other reviewer's tips. I didn't have onion soup mix but I added a bunch of raw onions and spiced/floured the meat, I didn't have tomato soup either so added some watered down tomato puree which I flavored up a bit with some garlic, etc. I also added a splash of Worcestershire sauce, potatoes, carrots, mushrooms, and crushed garlic. I cooked on high for 5 hours and it came out great! Good easy low key recipe. I love slow cookers!

Rempel Family Meatloaf

Reviewed: Jan. 21, 2009
My boyfriend and I are some of those few people who like meatloaf... well he's not picky and I like being able to put dinner in the oven on a weeknight and forget about it for awhile. This was one of the best meatloaves we've tried though (I rarely remember to use the same recipe). I made some minor changes based on what I had on hand... I used italian style bread crumbs, left out ketchup (yuck) and used generic steak sauce and tobasco sauce. I did line the pan with bread like another reviewer said I was really happy with the great that got cut out of the final product (trying to eat healthy and all that). Also, I couldn't find my loaf pan so I used and 8x8... thinner but more crispy bits so it was all good!

Barbeque Pork Two Ways

Reviewed: Jan. 19, 2009
I've used this recipe before and I have to say my BF and I absolutely LOVE it! I find it's really versatile in that I can use half BBQ sauce if I have some on hand or I can go straight with the called ingredients. It's a really easy dish to make and I love how I can cook it all day while I'm at work in the crock pot OR if I need something on the fly I can just make it on the stove top! Tonight I'm going to try it in my pressure cooker (best Christmas gift ever, btw!) and I'm really excited that it'll cut the cooking time by 2/3s.

Ground Turkey Noodle Bake

Reviewed: Dec. 29, 2008
This was a good/easy dinner but it was nothing to write home about. I added more spices, more fresh garlic, and used a can of cream of mushroom soup to help flavor the noodles (as others suggested). We enjoyed it but I don't know that I'll make it again - I think I'd rather try something a little more exciting.

Greasy Chicken

Reviewed: Dec. 6, 2008
Tasty recipe but I made a few changes to cut down on the "grease" and fat. I used olive oil instead of butter and less Soy Sauce and I used the reduced sodium kind. Overall a good recipe though.

Baked Pork Chops I

Reviewed: Dec. 6, 2008
This is our favorite recipe ever!!! This is the BEST pork chops recipe I have ever tried. Yum Yum Yum! I've never been particularly fond of pork chops before but they're always on sale where I shop so I set out on a mission to find a recipe that my fiance and I would love and THIS IS IT! Hats off to the chef!

Awesome Roast Beef

Reviewed: Feb. 26, 2008
I've tried dozens of recipes for beef roast in the slow cooker before and none of them left the meat juicy enough. I've gotten recipes from family and friends and just anywhere I could find them and finally I have found one to stick with. It was awesome! My boyfriend loved it (he's a real meat and potatoes kind of guy). I added carrots, onion, and mushrooms at the beginning then when the roast was almost done I made a side of garlic mashed potatoes. We can't wait to eat the leftovers tonight!
