Slow-Cooker Chicken Tortilla Soup

A regular recipe in our rotation with a few modifications. I use fresh jalapenos and add in more beans plus poblano and red peppers. To make it vegetarian, I omit the chicken and add in Quorn chicken strips for the last 30 mins of cooking. Serve topped with shredded cheese, diced avocado, and baked corn tortilla strips.

Pizza Stix

Delicious! As some other previous reviewers, I used phyllo dough (sprayed with cooking spray) and baked in the oven. I also sauteed fresh baby bella mushrooms and used 1/4 stick of fresh string cheese in each roll. Served with warm Trader Joe's marinara. A big hit at a football party!

Chicken Breasts with Balsamic Vinegar and Garlic

Key West Chicken

A solid marinade, though a bit too salty for my taste. I will add at least twice as much lime juice next time. I also marinated some vegetables with the chicken (bell pepper, zuccinni, and onion) and they grilled up nicely as well.

Fantastic Focaccia Bread

A fantastic, EASY focaccia recipe. I baked it straight onto the Pizza stone. I also shaped the dough after it had risen and placed on top garlic, rosemary, basil and some fresh parmesan cheese.

A great recipe, I've made this three times now with consistent results. Make sure you keep the dish simmering slightly above medium heat the entire time to get the sauce the right consistency and cook off the chicken broth.

A great recipe. Just add more curry and some chili powder to the chicken. Also, I took others' advice and made a sauce to go over the chicken (plain yogurt, green onion, and lime zest). If you do make the sauce, definately add more heat to the chicken to battle the sweetness!

Warm Mushroom Salad

I took this simple salad to Thanksgiving dinner. I sauted 4 cloves of garlic with crimini mushrooms and served it over baby spinach. Even my salad-indifferent boyfriend ate it! Next time I will grate some fresh parmesan on top to add some texture and a salty flavor.
