Slow-Cooker Chicken Tortilla Soup
A regular recipe in our rotation with a few modifications. I use fresh jalapenos and add in more beans plus poblano and red peppers. To make it vegetarian, I omit the chicken and add in Quorn chicken strips for the last 30 mins of cooking. Serve topped with shredded cheese, diced avocado, and baked corn tortilla strips.
