Simple Caramel Apple Pork Chops

Yummy! Easy! This was the easiest, quickest dinner that I've made in quite a while. I put the potatoes (for mashing) on the stove to boil and, in the meantime, made the rest of the meal. It could be considered a little sweet but my 2year old loved it and ate her meat before anything else (which never happens with pork). I'll be sharing this recipe with friends. Thanks NPB!

Corn Chip Salad

I really love this recipe. My Mom has been making this salad for the past 30yrs. The differences are: she adds taco seasoning to the meat, omit's the tomatoes and dressing and adds a picante salsa to it. A real hit with the kids because of the chips. Same concept as a one pan meal.

Artichoke Chicken

Flavor is great (make sure not to use marinated artichokes though). Not the prettiest of chicken dishes to offer to company but still it's the taste that matters and this is the only artichoke chicken recipe I use anymore.

Chocolate Chip Banana Bread II

Shortening and mayo?!? A bit much? No way! This bread is moist and delicious and oh so chocolately. Skip the low cal suggestions and make it as is... mmmmm!

Creamy Au Gratin Potatoes

I made this for company and the dish was scraped clean. I followed the recipe to a "T" and it's great as is. My favorite part? No soup needed in this easy to make, no frill but absoluty yummy, Au Gratin Potato recipe! Try it!

Chicken Marsala

This chicken is so yummy, so moist, so good. This is a recipe that I use for company, over and over and over again. I have friends ask me to make this. It's that good! Try it and make extra sauce because it's great with mashed potatoes!

Baked Spaghetti

Oh my goodness, was this ever good! I love this twist on traditional spaghetti and can't believe I waited so long to try it. I added fresh mushrooms and garlic to this dish and it was great but I can imagine it being great without. I also didn't have enough cottage cheese on hand so added some sour cream in as a sub. Delicious family meal. The kiddos will gobble it up (mine asked for 2nd's)!

Last Night's Chicken

This recipe was alright. I will give it credit since the chicken was very moist but too many onions and something about the onion/soda mixture gave my whole family heartburn and the burps.

Slow Cooker Enchiladas

Great potluck meal. Fast and easy (perfect for a busy mom!). Good but not the kind of enchiladas you know when you live in the southwest such as we do. Will definitely make again. I doubled the recipe and used 1lb ea. of hamburger and sausage. Nice flavor!

The Old Boy's Strawberry Pie

Nice tasting pie. Very easy to make. I'll definitely be making this one again. I would suggest someone elses advice that I read and taste your strawberries for their sweetness first. Mine weren't and I would have like them better sweeter.

Cottage Cheese Chicken Enchiladas

This is a great recipe. My family prefers green enchilada sauce so I switched to that and also changed the taco seasoning to some garlic & onion seasonings. The cottage cheese is a nice complimentary filler.

Kelsey's Favorite Stuffed Green Peppers

My family loves this recipe. I had never made stuffed peppers before. My husband actually will not eat peppers on/in anything. I decided to try it anyways and everyone loved them. My picky 2yr old loved them and my father raved about how much better they were than my Mom's peppers (forbid!). I've used chopped canned tomatoes, tomato sauce and spaghetti sauce. My family seems to prefer the spaghetti sauce overall. I also use both cheddar and mozzarella cheeses. Try this recipe!
