Spinach Chicken Parmesan
This was a pleasant surprise. I used fresh spinach and sauteed it in the butter/flour with some garlic before adding the milk. I also topped the cheese mixture with some shredded mozza and chunky/crispy bacon pcs. The sauce was really good and I used it on the rice & green bean sides.

Cajun Baked Catfish
Although I did not make the recipe exact due to lack of ingredients my version was fantastic and I plan to make the 'real' one again. I used Tilapia and had to sub chili powder for paprika and it turned out great. I did cook mine longer though. Thanks for posting.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies
This is an easy and versatile recipe. I have made it 3 times with different variations. I always use chips instead b/c I don't usually have the squares on hand. The 1st time I only had 1/4 cup butter so substituted extra peanut butter to make the rest. Today I added peanut butter chips to the batter along with the chocolate. This recipe is definitely one of my cookie staples - a big hit in our house.
