These are so yummy and so easy to make! The leftovers were even better the following day.

Coconut Curry Tofu
This was missing something, I agree with a lot of the other reviewers. It def. had a kick (from the chilly paste) but didn't have that "curry taste" I enjoy so much when going out to Thai restaurants.

Zucchini Casserole I
This was a great side dish. It def. wasn't substantial enough for an entree. I added mushrooms, used less than a 1/4 cup of oil, and added italian seasonings and garlic to give it some more taste.
