Figs with Goat Cheese, Pecans and Bacon

Very rich and yummy. However, I cut the bacon in thirds rather than half the slices. I don't if my figs are just smaller than most or what. But next time I may try using a whole fig since the taste of the fig and cheese got a bit lost. Still a great appetizer!

Honey Garlic Vinaigrette

Spur of the moment, I thought, "A honey vinaigrette sounds good." and then found this recipe. I used olive oil and decreased it just a bit for personal taste. I also added a pinch of salt, which I think really brought out all the flavors. Served it with mixed green, apple, crumbled goat cheese & walnut salad. It was perfect!

Peach Ice Cream

I halved the recipe and used whole milk in place of half & half. I also heated the milk for a couple minutes in the microwave and then added it to the eggs & sugar with the idea of cooking the eggs just a bit. I added the remaining ingredients and refrigerated them a couple of hours before churning. Turned out great!

Wally's Rib Rub

Good basic recipe. I changed a few things - added more garlic powder & used part chipolte chili powder. Also threw in a little onion powder. Let it marinate overnight and then baked them at 300 for 3 hours, then finished them off on the grill. They were very tender and tasty!

Good Old Fashioned Pancakes

Good recipe. Added some pecans. I may cut down on the soda a little next time. And I'm not sure if it's just my stove, but mine cooked best a notch or 2 below medium.

Cream Puff Cake

The only teeny critque I'd have is that the crust stuck to the pan somewhat. But I added some chocolate frosting on top of the crust and then layered it with the pudding as some had recommended. That pudding mixture is SO good! Everyone loved it! 5 starts
