Barbeque Beef Casserole

This was really good with a few modifications. I cut the beef in half, to one pound, and added a can of black beans to stretch it. I used dried onions to saute with the beef. I also added a can of fire-roasted tomatoes to the browned beef, beans and corn, and omitted the green peppers since my family won't eat them. Used closer to a full cup of sweet bbq sauce. For the topping, I used two 8.5 ounce boxes of cornbread mix, with 2 eggs and 2/3 C milk. It baked beautifully in half an hour, and the leftovers were even better the next day.

Key West Chicken

very juicy and tender but a little bland. I doubled the lime juice and honey and added a bit of italian seasoning; it was on the salty side even using low salt soy sauce. I expected it to be a bit sweeter. I'll kick it up a notch with seasoning next time.

Cheesecake Brownies

Loved the topping but the first attempt was a failure because I made the brownies in a 9x9 pan, and they just didn't cook through. Recipe is optimal in a wider pan (not as deep).

Ham, Potato and Broccoli Casserole

The family liked this. I added 1 T dried onion and 1 T dijon mustard to the soup/milk, and omitted the mayonnaise. I also put the grated cheese right into the soup/milk, and poured over. I kind of expected the french fries to be crisper, they definitely were mushy but it was good nonetheless.

Portuguese Sweet Bread I

Just perfect! I used softened butter instead of margarine. 3 cups flour is 15oz for those who weigh their flour for baking purposes. Also I made sure to warm the milk to 100 degrees before adding it to the bread machine.

Zucchini Yogurt Multigrain Muffins

Used vanilla yogurt, doubled the zucchini and added a half cup of shredded sweet potatoes. Also added mixed dried fruit instead of raising/pecans. Yum!

Ham N Cheese Potato Bake

Rave reviews at home. Quick assembly and easy to make. I substituted plain yogurt for the sour cream, used shredded cheddar cheese, and used cream o mushroom soup. It had a wonderful tang to it. I also used shredded hash browns instead of potatoes o'brien, and added dried onions instead of fresh. Hubby cleaned the casserole dish!

Sturdy Whipped Cream Frosting

OK as a fruit dip but a bit tangy from the cream cheese. I'd use it on a 9x13 cake with berries but not on other cakes. Not what I was looking for in a whipped cream frosting.

Beef Paprika

We have been looking for a flavorful beef stew recipe and this is IT. I substituted substitute 1T grey poupon mustard for the mustard seed, and added 1/2C red wine. I added 1/2C diced celery and about a cup of baby carrots. I also cooked the beef in the crock pot instead of on the stove. I'll probably reduce the ketchup and sugar next time, but we loved the sweet taste of this stew.

Florentine Artichoke Dip

Layered Eggplant Hamburger Casserole

I added shredded carrot to the meat mix, and used a can of jarred spaghetti sauce in place of the tomatoes and paste. I would probably cut the meat down to 1lb and increase the eggplant for the future. Family liked it!
